CEiMB ~ Blueberri-licious! Coffee Cake

Happy Hump Day all!  This morning I actually planned to snack on my banana then eat my pancakes with 3 slices of Trader Joe’s Peppered Turkey Bacon……But, once I was on the train….bacon, bacon, bacon was all I wanted.  It actually made a pretty good pre-workout snack for 1 points+….I never took a picture of my bacon so you all will just have to visual.

Even though I was dragging this morning, I still managed to whip up some “fluffy goodness” to take on the road with me ~ Kodiak Flapjacks!

Fluffy Pancakes

After trudging by foot and train through rain & wind, I spent 30 minutes doing the C25K (Couch to 5K) week 2 workout.  I pushed myself by increasing my speed every 30 seconds during my running intervals!

Post workout ~ I was STARVING!

I had TWO pancakes topped with 1 Tbsp PURE Maple Syrup, unsweetened coconut flakes and a banana (5 Points+)

Lunch today involved another Weight Watcher Fresh Meal ~ Baked Ziti!

It makes me smile whenever I see the ingredient lists for the new meals ~ REAL stuff!

5 points+ for the entire thing.

Sprinkled with crushed red pepper flakes.  If you are a cheese lover especially a ricotta cheese lover, you will LOVE this dish.  It was ok, but, I still like the ravioli’s the best so far.

Can you believe this is the FIRST time all week I’ve had my Spicy Asian Slaw?! 2 points+

Eaten at the “high top” table with an apple.

The only thing ~ I was STILL hungry so I grabbed a lite string cheese for a little protein power (1 points+).

Mid-afternoon my co-worker and I decided we needed something to “warm” us up so we strolled over to Pete’s for Lattes ~ I had a tall nonfat decaf latte with caramel drizzled on top (3 points+)

I sort of planned out tonight’s dinner last night while we were eating the Simple Slow Cooked Pork Loin…..I knew it would involve a little leftover pork tossed with my favorite new salsa.

Plus these La Tortilla Chipotle Corn Tortillas.

Ehhh, too many ingredients for a tortilla…

2 points+ each ~ not as good as a deal as the Mission Corn Tortillas where you get 1 for 1 point+….but, I figured if they tasted amazing, it would be worth it.  For the record, they are just ok.

I had 2 of the MOST delicious Shredded Pork Tacos ever ~ I attribute it to the salsa!

* 2 Chipotle Corn Tortillas (4 points+)

* 3 ounces Simple Shredded Slow Cooker Pork Loin, 3 points+

* 4 Tbsp Serrano Salsa Fresca

* 4 Tbsp finely shredded Low-Fat Sharp Cheddar Cheese (1 points+)

Plus 2 Wedges of Grilled Romaine ~ I still LOVE it this way even if I burned it this time lol.

Since dinner was so quick, I decided to cook up this week’s Craving Ellie in My Belly Recipe.  This week’s host is Bri from Yoshimi vs Motherhood.

She picked BLUEBERRY COFFEE CAKE and I pretty much knew I’d be making it ~ blueberries, walnuts, brown sugar, butter….need I say more?!

You start off by combining  cinnamon, sugar and chopped walnuts.

Then, whip together your butter, brown sugar and oil ~ I think it looks like chocolate sorbet Winking smile

Add in your eggs one at a time beating well after each addition.

The “SECRET” ingredient that makes this coffee cake super moist and delicious ~ 1 cup of FF Greek Yogurt ~ it is a fat replacement in this recipe.

Beating in your flour mixture 1/2 at  time until combined.

Layer half of the coffee cake mix and half the of the nutty sugar mix.

Top with blueberries and “smoosh” them into the batter.

Top with remaining batter and nutty sugar mixture.

Bake at 350 for a lot longer than her recipe states.  I baked mine for 42 minutes.

Slice into 12 slices and dig in!  I have to admit I thought I wouldn’t be happy with the portion because you get 1/12th of an 8×8 pan.   However, it was just the perfect ending for dessert tonight enjoyed with some hot tea.

It’s super moist, fruity and the nuts get roasted as it cooks so the flavor really pops with the crunch cinnamon sugar topping. (6 points+)

Did you eat coffee cake growing up?  How was it made?

I used to LOVE whenever my mom made the Bisquik Coffee Cake….she would serve it to us all hot, sliced in half with butter in the middle.  I have only made coffee cake one other time and it was a Strawberry one that I think I NEED to make again.

    ah, so jealous of the kodiak cakes 🙂 they don’t carry them here!

    and I’ve seen Ellie make this coffee cake and remember how good it looked, but I haven’t made it yet! I’ll have to make sure to do this once I can get some local blueberries again.

    My Gramma used to make the best sour cream coffee cake whenever we’d go visit her in Oregon. I always loved the crumbly topping the best 🙂

    That coffee cake looks scrumptious. But what I really love is Kodiak cakes! I always add protein powder to the batter when I make them. Yum.

    I love Kodiak cakes (wish I didn’t have to cut them out for GF).

    Which Mission Corn are 2 for 1? I get the extra thin ones and those are 1 each. I want to know what I am missing! hehe

    My mom to use to make the Bisquick coffee cake and I still do to this day. I carried on the tradition. It is worth the points!! Yours looks great I will have to try it.

    This coffee cake looks soooo good. I was obviously a deprived child, I didn’t have coffee cake until I was an adult. 🙂 Way to go on your run Danica! Enjoy your day!!!

    I saw grilled romaine last year somewhere – can’t wait to try that! The only coffee cake we had growing up was after church – and it was cheese danish – still my hands down favorite!

    Your pancakes are perfect.
    Never heard of grilled romaine. Interesting and well worth a try.
    As for the blueberry coffee cake – we LOVED it. I even stashed some away in the freezer just for me when the cravings strike. 😉

    I got a box of Kodiak pancakes and tried them out. They are amazing!!!! Now I don’t have to feel guilty about eating pancakes. So good!

    You turned me onto broccoli slaw too w/ TJ’s PB dressing. I add spinach and grilled shrimp to it to make it a huge-ass salad.

    This week’s recipe was so good, and your picture looks great. I loved how light and moist the cake was, and it was just sweet enough for dessert but not overly sugar-laden for breakfast either.

    Hi Jennifer & Melissa,

    You know, I actually spoke too soon. The Mission Tortillas I remembered are 1 points+ each, not 2 for 2 points+. I will update the post to fix that…..I do know they make smaller versions of tortillas, but, they are still 1 points+ each.
