Cheddar & Chive Biscuits

Happy Friday Eve all! This morning I woke up craving biscuits with eggs or better yet, a cheesy, biscuit & egg sandwich. These drop biscuits take less than 5 minutes to make and only 10 minutes to bake.Here is my spin on this Weight Watchers biscuit recipe. I used this protein packed Krusteaz Complete Buttermilk pancake mix as I wanted to taste buttermilk in my biscuits. I used green onions for the chives as that is what I had on hand and added a little fresh ground black pepper.Stir just until combined.Form into 4 biscuits by dropping on a pan with a silpat or parchment paper and pressing until each biscuit is about one inch thick.

Bake at 450 for 10 minutes.Whip up your egg scramble while the biscuits cook. I took 3 eggs, a little green onion, 1 Tbsp parmesan  for extra cheesiness, a splash of milk, dashes of hot sauce, salt, pepper. Whisk and scramble in a nonstick pan over medium low heat until cooked through, about 4-5 minutes.I topped one muffin with half the eggs and served it with a cutie for 5 Smartpoints.

This totally satisfied my craving. The biscuits are moist and cheesy with a subtle buttermilk sweetness. I think tomorrow I’ll make ham & egg sandwiches with the other two biscuits.I met The Husband at Jersey Mike’s for lunch where I ordered my favorite sandwich and shared a bag of chips (4 sp).

Mini #7 Turkey & Cheese Mike’s Way with pepperoncinis and jalapenos. 8 spMy activity for the day was doing this 30 Minute Total Body Slim Down Yoga. It is free on Demand with Comcast. It felt great to stretch but I am definitely not flexible.

My post yoga snack was a banana.

We made these Cheesy Mini Meatloaves for dinner tonight. I love them!These mini meatloaves are just like burgers pack with all the flavor and cheese inside.Each cheesy meatloaf comes in at 7 Smartpoints and it is worth every point. Served with a simple side salad tossed with apple cider vinegar and evoo. I gave into buying these Dove Peanut Butter Valentine’s  chocolates today. 2 sp for one.28 Daily WWFreestyle Smartpoints, 6K steps
