Happy Wednesday all! This morning, I honestly was not feeling my workout at all. My legs were sore and I was tired but you know what they say?? The best way to get rid of muscle soreness is to workout the lactic acid in your muscles. I hopped on the treadmill and knocked out C25K 2.2 and followed that up with another Jillian Michael’s Body Revolution workout. It was rough but I’m proud I pushed through it all.
Breakfast was a Healthy Eggroll (Mission Extra Thin Yellow Corn Tortilla, Sargento RF Cheddar, sriracha and a fried egg) plus 1/2 a Sumo orange for 3 sp.I picked up these Trader Joe’s Quinoa Cowboy Veggie burgers this week to try for lunches.They are individually wrapped which I love and cone in at 5 Smartpoints. The burgers are awesome! They have a nice crunchy exterior and a smoky, creamy and pepper inside. I could eat them by themselves or with a little Harissa, ketchup and mustard. My side was snap peas X’s 2 topped with whipped butter, garlic salt & pepper.
All together lunch came in at 6 Smartpoints.Mid afternoon I snacked on 2 Tbsp cashews and a banana (fun fact: the potassium in bananas helps with sore muscles). 3 sp.
I also had 2 slices of Jarlsberg RF Swiss while making dinner – 2 sp.
I made my first recipe tonight from the Weight Watchers Italian Cookbook – This was also my first Stromboli ever.I used the recipe for reference but mixed up the ingredients and calculated the points based on what I used.
We topped our french bread with pesto, ham, one jar roasted red peppers, 2 oz Trader Joe’s Lite Mozzarella, 4 slices Jarlsberg RF Swiss, green onions and black pepper.All rolled up and topped with an egg white, sesame seeds and parmesan.Baked at 375 for 30 minutes then cooled for 15.Seriously amazing! This just Mel’s in your mouth with gooey pesto cheesiness, smoky ham and sweet peppers. Served up with warm pizza sauce and a simple side salad topped with Newman’s Lite Line Vinaigrette.
I started with 1 slice that I devoured…..Then went back for another. Each slice is 3 Sp with my 1 sp salad. This is definitely going on our menu again – it’s so fun because you can mix and match your toppers with your favorite pizza or sandwich ingredients. It’s pretty big and makes 12 one inch slices. I had 2, my husband had 5 and there were 5 pieces left. I say yes especially if you serve a side with it. It’s so easy and delicious.

I wonder if this would work with the 2 ingredient dough that has been floating around out there… greek yogurt and flour. Which would, I assume, make it even less points? This looks awesome!
