Chicken Cilantro Pot Sticker Veggie Soup Recipe

I created this Chicken Cilantro Pot Sticker Veggie Soup to put an adventurous spin on traditional Chicken Noodle soup when The Husband was sick.  It is so easy to make and ready in less than 30 minutes.  Simply pick any mixture of fresh or frozen veggies, add broth and mini pot stickers.  The sesame oil adds another layer of flavor while the Teriyaki Sauce sweetens up the broth and a little Hot Sauce gives it a spicy kick!  The BEST part is this is SUPER LOW in calories and fat ~ yeah!

Chicken Cilantro Pot Sticker Veggie Soup Recipe

INGREDIENTS:

2 tsp sesame oil

3 carrots, peeled and sliced

2 summer squash, halved and sliced

2 c fresh sliced white mushrooms

1 garlic clove, minced

32 oz Organic Chicken Broth

3 Tbsp Annie’s Organic Teriyaki Sauce

1 tsp (dashes) Srirachi or your favorite hot sauce

1 tsp Extra Virgin Olive Oil

1 Package Trader Joe’s Mini Chicken Pot Stickers or comparable frozen Won Ton’s or Su Mei

6 c Organic Spinach

4 Scallions, sliced

INSTRUCTIONS:

1. Heat sesame oil in a large sauce pan over medium heat.  Add carrots through garlic and sauté for four minutes.  Add Teriyaki Sauce, hot sauce and chicken broth.  Bring to a boil.

2.  While the soup boils, heat the olive oil in a medium skillet and add pot stickers.  Cook for two minutes or until slightly browned and remove from heat.

3.  Add pot stickers to the soup mixture and boil one minute.  Add the spinach and cook for an additional minute.  Remove from heat and stir in scallions, reserving a small pinch to top soup boils.

Makes 4 LARGE servings with 9 potstickers each.  Each serving is 4 WW Points+!

The “Star” ingredient in tonight’s soup is Trader Joe’s Mini Chicken & Cilantro Wontons (aka Pot Stickers).

Check out the stats ~ LOVE it!  1 serving is 1 point, 2 servings is 2 points!

Start off by sauteing your veggies in sesame oil for 4 minutes.

Add chicken broth, teriyaki sauce and hot sauce.  Bring to a boil.

While the soup boils, slighty brown your mini potstickers in olive oil.

Add your pot stickers to your soup and bring back to a boil, about 1 minute.

Add spinach and boil until steamed, about one minute.

Remove from heat and add scallions.

Scoop into bowls and top with additional scallions.

If desired, add a little more heat ~ I heart Srirachi Hot Sauce ~ it’s AMAZING in soup.

    omg this is such a creative idea! i got some TJ’s Thai Shrimp Potstickers! Might have to make them into a soup – tons of veggies and a “no chicken” broth would work – omg thanks for the idea!!!!

    FOUR of those mini-potstickers/wontons were 50 calories?! If you didn’t show the nutritional label, I may not have believed you. I wish we had a TJ’s just for those!

    Marisa ~ I LOVE my camera. I actually went down from the big/bulky cameras everyone is buying to a point and shoot that fits in my purse. I wouldn’t trade it for a big one again at all. I have the Canon PowerShot SD890IS. I got it at Sam’s Club and think they sell it at Walmart too. I have been using it now since march and think it does a great job.

    THIS is delicious – made it on my first week back on WW. I cook for my family of 5 every day. My 14 year old son devoured it, my husband and daughter loved it too. (The 9 year old, not that adventurous yet!)

    ground chicken filling-then steamed
    veggie ones would be great also

    do you have any idea how to calculate homemade with points

    Thanks for the comment. I absolutely LOVE potstickers especially making my own – they are delicious. You can calculate the points+ in one of three ways. First option, to add up the points+ for each item and divide by the number of servings. Second, you could enter the recipe on recipe builder (weightwatchers.com). Finally, you can go to a free site like http://www.caloriecount.com or http://www.myfitnesspal.com, input the recipe and calc the points+ based on the nutritional information provided.

    MMMM i just made a version of this for my lunch tomorrow can’t wait to eat it! I used the frozen stir fry veggies that Trader joe’s makes for an even faster shortcut, the whole thing took me about 10 minutes to make.

    HI Jen,

    The recipe makes 4 servings with 9 mini potstickers each. It can be a decent size serving depending on how many vegetables you use. My bowls are usually around 2 cups each for 4 points+. If I want more, then, I just have another 1/2 serving for 6 points+.

    I made this tonight for dinner. This recipe is great! I added zucchini and used crimini mushrooms, which added more flavor to the soup. My boyfriend really enjoys it as well. Thanks again for the recipe this is creative, light, and flavorful!
