Happy Weekend everyone! I have had such a delicious 30 SmartPoints food day that I cannot wait to share with you all and it includes kind of from scratch Weight Watchers Chicken Pot Pies. But, first, I am super excited to you all that my awesome week back on track showed up at the scale today with a 3 lb loss ~ woot! I am finishing my week with 22 of my extra weekly points and I think I will not use them. I did you about half this week for my hungry day and when I wanted to have a treat which is exactly what they are there for.
Saturday mornings for us usually involve heading out to our favorite breakfast spot, Huckleberries for breakfast. I am sure it’s their California Cookin’ with a Southern Flair…mmm, how I love Southern food!
I have 2 goto options whenever I go out to breakfast.
- Veggie Egg White Omelet without cheese (it’s slimy to me in omelets), fruit or tomatoes, sometimes grits and a slice of toast.
- 2 eggs over medium with 1 piece toast dry (you don’t miss the butter when you are dipping it in yolky goodness), 2 pieces of bacon and tomatoes or fruit. I almost always skip the hashbrowns as they are not worth the points to me and if I want a little, I take a couple bites of The Husbands versus having a whole order on my plate.
This morning’s breakdown = 2 eggs (4 sp), 2 pcs bacon (3 sp), 1 slice sourdough (2 sp)
This definitely left room for my Starbuck’s tall nonfat cappuccino with caramel drizzle on top (2 sp)~ savored while working away as my computer was fixed today by our IT guy in the UK – Yay!
After working away and before we stocked up on eats for the week, The Husband and I went to Chipotle. Sometimes I get Chicken Tacos and other times I get a salad like this. For those using WW online or the app, Chipotle is on there so you can check out the points and decide what’s worth it to you. I usually pass on the rice/beans because I’d much rather have a little guacamole or corn salsa.
Lettuce, Chicken (3 sp), fajita veggies (1 sp), corn salsa (3 sp), fresh tomato salsa (0 sp), a little red sauce and half the guacamole I get on the side so I control how much is served (4 sp). I skip the cheese as you can’t really taste it in a salad and I skip the dressing as there is so much flavor with what I picked, I do not need to spend the smartpoints.
My bowl with 1/2 the guacamole came in at 11 smartpoints – deal!
I had some “juice” for snack.
Dinner tonight were these amazing Weight Watchers Individual Chicken Pot Pies. I’ve made them once before so I knew we loved them. You whip up everything in one pan then top them with a crescent roll and tadah ~ you get an entire pie to yourself for 7 smartpoints. You can find the recipe by clicking here.
Here is how I made them (only 1 change, promise).
You know a recipe is going to be good when you start out cooking chicken in a little butter with salt and pepper.
Once it’s golden (after about 5 minutes, remove it from the pan with a slotted spoon and set it aside).
To the same pan, add a little more butter, 1/4 c flour and your chopped veggies. I added about 1 1/2 cups cremini mushrooms as I only bought 1 lb of chicken.
After they are softened (about 5 minutes), add 3 1/2 cups chicken broth and simmer for about 7-8 minutes.
Add your peas, cream cheese (see it just gets better and better!), thyme sea salt and black pepper. Simmer for another 5 minutes or until your sauce slightly thickens.
Add the cooked chicken including any juice and remove pan from the heat.
Use a 1 cup measurer (or your Weight Watchers 1 cup spoon) to divide the mix equally among ramkins. The mix actually works perfectly and you will fill each to the brim with nothing leftover.
I used Trader Joe’s Crescent Rolls for my crust.
Mainly because they are made with real ingredients you recognize and have decent stats.
Place a little triangle over each dish and bake at 400 for about 9-10 minutes or until the tops are golden.
Looks good, huh? They are amazing! Whether you are diving straight in for the filling or breaking off part of the crust to scoop in every bite, you will love these pot pies.
I served ours up with a simple side salad of Trader Joe’s Organic Herb Salad mix tossed with Meyer Lemon Olive Oil and Balsamic Vinegar (1 sp).
I definitely can’t wait to have one of these tomorrow for lunch. I think tomorrow is going to be another tasty day as I will be putting on my Slow Cooker Turkey Vegetable Chili.
