Happy Wednesday all! Today was a super productive day, but, also the first day all week where I had a hungry day. I used the WW Freestyle methodology to use zero point foods as my base and built from there to ensure my meals had staying power. You know what? It totally worked and I even finished the day under my Daily Smartpoints Target.
I am pretty excited my Healthy Eggroll comes in now at only 3 Smartpoints. (fried egg, Mission Extra Yellow Corn Tortilla, Sargento RF Cheddar) plus 1/2 a mango.After running errands, I hoped on the treadmill for 50 minutes marking today 3 out of my 5 treadmill day goal this week.
My latest Trader Food find that I am digging – ABC + K Slaw. The container says 3 servings at 4 SmartPoints but keep in mind 2 things – that includes all fruit/veggies and dressing.I tossed 1/3 of the slaw with 1 Tbsp pistachios and 1 Tbsp of the dressing for 3 Smartpoints.I started with one Turkey Stuffing Muffin and decided I’d go back for another if I was still hungry. I was so I had two for 6 Smartpoints.Mid afternoon snackage (3 hours later).
1/2 cup Trader Joe’s 0% Greek Yogurt topped with a banana, cinnamon, 1 tsp agave nectar and 1 Trader Joe’s crushed mini gingerbread cookie. (3 Smartpoints).Dinner tonight was awesome as in you all need to add this Chicken Tortilla Soup to your must make recipe list.
Here is my spin on this Weight Watchers 2 SmartPoints soup.
Saute one bell pepper and an onion in 2 tsp avocado oil until caramelized, about 6-8 minutes.I did not have a fresh jalapeno on hand so I diced up a few Trader Joe’s Sweet & Hot pickled jalapenos.
Stir in jalapeno, garlic and 1 tsp Homemade Taco Seasoning. Cook for 1 minute.Top with 1 lb whole chicken breasts, 1 thyme spring, 1/2 tsp oregano, 15 oz fire roasted diced tomatoes with chipotle, 6 cups chicken broth and the juice of 2 limes.
**If you can find the diced tomatoes with chipotle definitely use them as they are a major flavor booster. If not, then, you can use diced tomatoes with green chillies.
Bring to a boil and boil for 20 minutes.Meanwhile, prep your toppers. Since the soup is zero points! This is where you can add points for more flavor boosters.
I decided on real deal cheese, crushed tortilla chips, avocado and fresh tomatoes.Remove from heat, discard the thyme sprig and shred the chicken breast.Add the shredded chicken, cilantro and 3 diced green onions.Tadah! Dinner in under 35 minutes.Slightly sweet, spicy, smoky, tangy and straight up amazing!
