It was so FUN reading the Diners, Drive-Ins and Dive places you all have visited or want to visit on my last post. I actually think it might be kind of fun to find one place in each city we travel to and check it out…..I know that’s a lot of “Diner Food” but you only live once
Today was one of those days where it’s gloomy/rainy outside and you just want to stay inside/not cook.
Breakfast was simply a Cinnamon Raisin Bagel thin with 1 Tbsp Natural Honey Roasted Peanut Butter (6 points+)
Plus a Mango ~ Raley’s (our local grocery store) has them on sale for $0.37 each. I am really trying to convince myself I like them, but, I find that if they are not super ripe, I think they taste like Christmas Trees (for the record, no, I’ve never tasted a Christmas Tree ~ it just tastes like they smell).
I worked away on recipes all morning, but, did manage to break for a quick cheese & fruit snack (1 points+)
For lunch we both thought those BLTA’s we had last week sounded awesome. The only problem was we sort of lacked the “key ingredients” like bacon and bread.
Why go to the store and buy it, when you can head over to the Joy of Eating for the BEST BLTA’s in the world.
I started with a side salad with my dressing on the side (2 points+)
Then, I sort of changed my mind though when I remembered the last time I was there with TJ and she introduced me to BACONWICHES.
Egg White Veggie Scramble (3 points+)
I had one slice of their homemade bread topped with 1 Tbsp Jam…then, I cut my one slice of bread into 4’s so I could have TWO sandwiches.
Adding 1/2 a slice of bacon to each sandwich half (5 points+)
Smooshed together and savored…..salty, sweet, chewy, beyond words good!
Dessert shared with The Husband.
We decided to walk along the Bay after lunch.
They had a Jet Ski Race and Show going on that was actually pretty interesting to watch.
These guys kept flipping in 180’s and 360’s and double flipping. It was pretty cool to watch.
We both spent the afternoon entering RECIPES!!! Major KUDOS to Carolynn and The Husband for helping out entering recipes because they both totally do not have to…..LOVE!
We were undecided about dinner and not super hungry. He decided on Chef Salad with Hot Links LOL…..
My dinner was a little “CORNIER”!
I rummaged the freezer and came up with some Fresh Corn, Potato & Bacon Corn Chowder I froze ~ SCORE!!! Topped with chives & crushed red pepper flakes (6 points+)
Plus one of those ADDICTIVE Chipotle Cheddar BEER Corn Muffins (4 points+)
10 points+ for everything and I didn’t have to cook at all! Now you all know exactly what I freeze everything LOL….
Dessert is going to be a big bowl of watermelon with cantaloupe and some Decaf French Vanilla Coffee while we watch The Next Food Network Star!

Lunches might involve This Crunchy Apple Salad and Crockpot Split Pea Soup
Other ideas that I STILL want to make Sopitas de Tortilla, French Dip Sandwiches, 9 points+ & Made with BEER, Shrimp Cobb Salad

I thought it was just me who thought mangoes tasted like Christmas trees! They look delicious and I love all fruit, but I just can’t eat them plain.

Wow great pictures of the jet ski racers! That must have been fun to watch.
So far my little chef is not very inspired this week. =/ I’m even not bringing a lunch tomorrow and just going to see what there is. Can’t wait to see your new recipe page when it’s up so I can get inspired and get back to cooking! I do think I’ll make Holly’s vegan pumpkin molasses cookies though!

I don’t know if you have ever posted about this, but could you do a post on freezing? I never freeze and I wish I did. I have no idea where to begin…containers, wrapping? labeling. Cooling stuff off first or not? HELP! It would save so much aggravation and money!

I absolutely LOVE LOVE LOVE mangoes, but they absolutely MUST be ripe! I taught a new Zumba class this morning (*LOVE* & yes, crazy, but I wish every day was Monday!) and was starving when I got home, so I made a quick snack of 2 slices of Sara Lee “De-Light-ful” bread, schmeared w/ laughing cow cheese, thin sliced deli turkey *&* thin sliced cucumber. *Delightful* indeed!

When you have a really ripe mango isn’t it more difficult to peal and kind of stringy? I actually prefer the “Christmas tree” type because its firmer and easier to handle.

OMG…a friend of mine says EXACTLY the same thing about mangos. They remind him of pine trees. Those jet skiers are amazing. Great photos! Have a good day Danica!

Hi Amy,
You know I never have done a post on Freezing but that is a great idea! Here are a few tips I can offer up now.
1. I always let my food cool (in the fridge) before placing it in the freezer.
2. I personally like using either ziploc bags labelled or the disposable containers you can label/stack on each other.
3. I ALWAYS freeze in single servings so I can grab and go unless it’s for a bigger meal like when I make spaghetti sauce, then, I freeze the batch.
4. Unthaw in the fridge over night or in the microwave on 50% power for a few minutes just to loosen from the bowl then heat in a pan or oven.
5. If you are going all out, I sometimes have frozen in dispoable foil tins, enchiladas, lasagna, etc. for quick unthaw options.
I will add it to my list (remind me if I forget!) to post about how I freeze things. Hope that helps a bit.

aaahh Danica I LOOOVE mangos but they can’t be mushy eww yuck! Only new thing on the menu this week is skinny tatse swedish meatballs!! Thursday is my last day of work than Iam on summer break!! YAY!!! 🙂

I’m with you on the freezing everything. It doesn’t take much extra work to make a double batch of something and freeze the rest. It makes it so easy when you don’t have time to prepare meals. You still have something healthy and homemade.
