Hi all! How was your weekend? My weekend has been pretty good. It started off on the right note with a 1 lb loss! I am excited as that means that I was able to balance out all that delicious food in Las Vegas. Success!
This morning I was totally craving an egg sandwich so I headed to the store to pick up a freshly baked loaf of rosemary sea salt bread for breakfast. In all honesty, I think my entire day was all about feeding my food cravings and it was such a delicious day!
Eggwich with 1/2 a mango (2 toasted slices rosemary sea salted bread topped with 1/2 Tbsp whipped butter & a ‘fried’ egg) – 4 spSince I was running to the store this morning, it totally justified an iced tall nonfat latte with caramel drizzle on top. (2 sp).I met my super cute friend today to hike The Tower and go out to lunch. It’s been awhile since I took the Tower Challenge and it was hard but we made it around the lake, to the top and back.Lunch was Thai at Buddha Bistro.
I had 4 pieces of these fresh avocado spring rolls (4 sp).About 1 cup of Shrimp Drunken Man Noodles… honestly, I could eat the whole plate! (6 sp).?Then, we indulged a bit with this spicy green coconut curry. I had about 1/2 cup of the chicken curry with 1/3 cup brown rice. (7 sp).I spent the afternoon watching a movie, reading and relaxing before grilling up a simple dinner for us.
Aidell’s Spicy Mango Chicken Sausages topped with pickles, tomatoes, ketchup and mustard (9 sp).Served up with a simple tomato, cucumber, avocado salad tossed with red wine vinegar, olive oil, sea salt & pepper (1 sp).I had a nectarine from the farmers market for dessert.
