Happy Friday all! I’ve interrupted this week’s Flashback Friday to bring you all one of my favorite goto Weight Watchers SmartPoints friendly lunch ideas. This easy tuna salad also works well as a hearty snack too. What makes this salad “special” is the way you layer it. You definitely need a few types of crunch, a little sweet/salt/spice, dill and a little tart creaminess.
Crunchy Tuna Salad
Let me take you through the steps.
Start off with a 5 oz can of Albacore Tuna in water, drained. Fork it into a bowl then sprinkle generously with dill weed then a little garlic salt & black pepper.
Did I mention the entire can is only 1 SmartPoint?!
Next, add your crunch. I always diced one celery stalks and 1/4 cup diced red onion.
The sweet/salt/spice depends on my mood. For salt I use pepperoncinis, for sweet bread & butter pickles and for spice I use Sweet & Spicy Red Cherry Peppers.
For creaminess, it depends on what I have on hand. 2 Tbsp Light Mayonnaise adds (3 SmartPoints) or 1 Tbsp Light Mayo & 1 Tbsp Nonfat Greek Yogurt adds 1 SmartPoint. The best part – they both give you the same taste and nobody can ever tell it’s not 100% mayo made.
I balance this out with about 1 tsp regular or flavored mustard.
Carefully mix stir everything together until blended but chunky. The entire bowl is 2-4 SmartPoints depending on which direction you go.
My favorite way to devour this crunchy Tuna salad is with crackers like these Crunch master 5 seed crackers. You get 14 for 4 SmartPoints.
You can scoop this on romaine lettuce leaves or on celery stalks if you want to make it Simply Filling or to save your points for later in the day.
Halve everything for snack storing the other half in an airtight container.
Or serve it up for a complete meal with cucumber slices and a piece of fruit.
It was seriously a tough decision to post a healthy recipe or another “Mock” cookie recipe for you all today. In the end, I thought I’d share a way to balance it all out so you have room in your points budget for the cookie recipe I’m sharing next week. 🙂
