Happy Labor Day all! To celebrate the holiday and long weekend, we cooked with beer, added BBQ sauce and hosted a Beer-Beque. I really wanted to make these BBQ pork, corn, coleslaw bowls that I saw a picture if awhile back. We decided to use this local Rubicon Beer that has been brewed in California for over 30 years before it goes away as the owners are closing up shop (sad).
I rubbed a pork roast with some KC rub before searing all sides to form a nice crust.
I poured the entire bottle of beer over the top and cooked it on low in the slow cooker all day. Our house smelled so amazing!
While the corn grilled outside, I shredded the pork and whipped up a batch of this 1 Smartpoints Lemony Coleslaw with Apples.
Grab a bowl, add some pork and toss with a drizzle if your favorite BBQ sauce. It’s so delicious…the beer makes it tender and pairs so well with the sweet tangy rub and BBQ sauce. I could eat just this…nothing else needed!
