Daily Snap: Caprese Salad

Happy Wednesday all! Sometimes it’s the simple things that taste amazing. Caprese Salad is one of my favorite things to have all summer long and it’s so easy to make.

Pick up a few of those big, colorful heirloom tomatoes you’ve been eyeing all summer. They are worth the $ – promise.

Thinly slice, sprinkle with sea salt and black pepper.

Thinly slice some fresh mozzarella and topped with sea salt and black pepper.

Drizzle everything with a little olive oil, a little acidy tang like red wine vinegar or fresh lemon juice and finish with a drizzle of Trader Joe’s sweet balsamic glaze.

Finish your Caprese Salad with a little freshly chopped basil.

Tadah! Easy, right?! 2-3 Smartpoints for 2 slices.I feel really proud about how today went down. We had a fun team building lunch at Village Pizza and Grill.  I limited my appetizer tastes to one sample that fit on my little plate. My entree was a chicken kebob wrap. I got salad instead of fries for my side. I ate only half my wrap taking the other half Togo. My mouth said nooo, eat more because it was delicious, but, I was satisfied so I stopped – success!

Daily Snap Recap:B: 1 Svg Trader Joe’s Bran Flakes topped with a banana and 1/2 cup 1% milk (5 sp)

S: Green fig, hard boiled egg

L: 1 BBQ chicken wing and 3 black bean nacho chips (5 sp), tossed salad with 1/2 a chicken Kebob Wrap (5 sp)

S: Starbucks tall nonfat cappuccino with caramel on top the foam (2 sp)

D: 1 BBQ drumstick (3 sp), 1 Svg caprese salad (3 sp)

Lots of watermelon was consumed while I cut up another one for lunches this week
