Happy Monday & Happy Cookin’ all! I honestly do not know where to start as there is so much deliciousness in today’s post. It probably started last night when I put this 7 point Weight Watchers “Chorizo” and Tortilla Casserole in the slow cooker. I am pretty sure I dreamt about gooey, cheesy, tortillas all night long.
Here is how I made it. I used just one large onion, 2 bell peppers, 1 jalapeno for a spicy kick & 2 garlic cloves.
After sauteing the moisture out, I added 9 ounces of these Honey Habanero sausages, 1 tsp homemade taco seasoning and a little cilantro from our garden.
Spray you slow cooker with nonstick cooking spray then build all those delicious layers. Corn tortillas, 1/3 of the sausage/pepper mix, 1/2 cup Lite Mexican Cheese. Repeat 3 times.
Whisk 12 eggs with 1 cup 1% milk, sea salt & black pepper. Pour over your casserole.
Top with the last 1/2 cup cheese (yep, this baby has 2 cups of cheese in it!) Slow cook on low for 6 – 8 hours or high for 2 hours.
Until everything is cooked through and the cheese is melted all over the top.
So, the one thing I didn’t read before making this is that it makes 12 servings. I couldn’t fathom cutting this into 12 or eating that many servings so I divided it into 10 for 7 Smartpoints each.
The verdict – it’s so good! It reminds me of cheese enchiladas but with fun spicy sausage bites throughout. This would totally work for any meal of the day.

Good stuff, right?! And that only gets us to breakfast. Lunch involved another Taylor Farms Asian Salad – I’m so in love with these. Dessert was a new recipe for 3 Smartpoints Cinnamon Banana bread I made up yesterday. I’ll share it with you all tomorrow. Dinner…well, I have even more pictures to share with you all below.

I’ve been asked by several of you of you if I get Blue Apron often. Honestly no, but, every now and then there is a menu I just can’t resist and you all know I’m easily influenced by food lol.
I think I also enjoy the challenge and finding new ways to cook foods. Like tonight’s dinner – I loved everything about it and will definitely repeat it. I do not know why I never thought to bake flour tortillas with real deal cheese on them but it’s such a great idea.
I lighten it up by using nonstick spray or less oil and skipping the things I do not like (sour cream). I usually 1/3 of what I make and The Husband has 2/3’s.
Such a delicious for day – I can’t wait to eat the rest! I love feeling excited for what’s on the menu as it makes me happy and it so much easier to stick to the plan.
