Happy Monday all! Today I really wanted to stay in bed, but, I told myself I am kicking the week off with a solid workout. I knocked out my 34 minute C25K jog/walk thinking that was easy and it totally set the tone for day. I think it made all the difference in the food choices as I was so hungry all day. I am glad I packed extra snacks to stay the course and made a great choice for a surprise lunch with my boss.
Daily Snap Recap:B: Eggwich (1 fried egg on top of 1 slice Nature’s Own Butter Bread with 1/2 Tbsp whipped butter) – 3 sp, 1/2 cup berries
S: banana, Jarlsberg Mini Swiss cheese (2 sp)
L: @Jack’s Urban Eats – mixed greens, grilled corn, garbanzo/kidney beans, grilled mushrooms, pepperoncinis, olives, oranges, chicken & balsamic on the side (5 sp)
S: 2 cuties, blueberries, 100 calorie cashews (3 sp)
S2: for the drive home – hard boiled egg
D: 3 oz BBQ pork ribs (4 sp), 3 oz fried potatoes cooked in 1/2 Tbsp avocado oil (4 sp), asparagus
I have a feeling I’ll be having another snack tonight as I am still hungry. Lol

Love this!!! I get stuck on the same meals/desserts every stinkin’ day and I get bored. Thank you for sharing yours with us. I have so often wanted to have ribs and didn’t know how to weigh them out. Do you weigh them with or without the bone? Thank you.

I weigh them with the bone, then, weigh the bone after eating deducting that weight.
