Hi everyone! How was your weekend? Our weekend was busy but super fun. I’m excited that I kicked off February with a 2.4 lbs loss. I spent yesterday getting everything organized again after last week’s craziness and hanging out with The Husband.
Today we were up early to head to the Sacramento Antique Faire before heading to lunch at the Buckhorn with The Husband’s Mom. I spent the afternoon cooking and baking up a storm for a project I’ll be sharing with you all soon for National Breakfast for Dinner month….Hence my random snackage today.
Can you believe I whipped up 74 muffins, 2 pancake recipes, 1 waffle recipe and 48 cookies for The Husband’s Valentine’s?
I think I officially give up on cornflake chicken, it’s just not super good to me. I didn’t mind the Cooking Light recipe but I didn’t love it.
As for everything else, I cannot wait to share especially my healthier Loft House Cookie recipe.

I found a chunky artichoke/jalapeno dip (2 tbsp = 2 sp) at Trader Joe’s. I’ve used that on top of ham/turkey slices to make roll ups with cucumber in the middle. I’ve also used it as the spread on wraps instead of mayo. Continuing to think of other uses (other than actual dip)…
