Hi all! A few of my Weight Watchers friends have been raving about this 1 Smartpoints Lemony Coleslaw With Apples. I like coleslaw but it’s not something I usually make or order too often. I have to say though, this recipe is awesome. I made a few changes adding a bit more sugar (2 Tbsp) and used cilantro instead of parsley. It’s slightly sweet and tangy from the lemon but the onion and cilantro really brighten the dish. The pink lady apples added a great sweet crunch. I think this would be awesome on grilled fish tacos!
So, um, that might’ve been the highlight of my day 😀 I served it up next to one of my favorite quick cooking chicken burgers that I grilled last night with our chops.
What I’m proud of today:
- Eating the snacks I brought without touches the Reese’s with Pieces cups!
- Getting my 1 hour walk in to start my day.
- Working until 9:30 pm, getting The Husband fast food (@his request), ordering none for me and eating a healthier Trader Joe’s Mac & cheese from the freezer when I got home at 10pm.
Not as glamorous a day as I had planned but I’m proud of the choices I made on one long day.
