Happy Tuesday all! I woke up this morning craving an Eggwich with watermelon in that order. Have I ever told you all about Land O Lakes Whipped Butter? It’s my favorite butter to use as it’s just a couple ingredients and even better it’s only 2 SmartPoints per Tablespoon.
We had a working lunch today from Gotta Roadside that was so good. I love ordering grilled fish whenever I can as most fishes are about 1 SmartPoint for 5 ounces. My Mahi Mahi Tacos were so light and satisfying I didn’t miss the onion rings, burgers and fries everyone else got.
Dinner was a new recipe I’ve been thinking about for some time that involved basil from our garden plus asparagus and mushrooms I picked up at the Farmers Market. I made my healthy pesto swapping out the parmesan with pistachios. I loved the nutty bite that paired so well with the garlicky pesto, sweet sun-dried tomatoes and cheesy tortellini pasta. I “stretch” my pasta dishes by bulking them up with veggies – in this recipe I used asparagus and mushrooms. Interested in the recipe?
