Daily Snap: Spicy Larb Lettuce Wraps

Happy Tuesday all!  Thanks for sharing your Mac & Cheese love and for the nice comments on yesterday’s post. Today was one tasty day that is definitely repeat again. I love it when you can work in a great and still have points left to spare.

I tried a new Weight Watchers recipe for lunches this week and I have to say it’s good but not as fantastic as I thought it would be.  I made a batch of the Spicy Thai Larb lettuce wraps using ground turkey.  I liked the brightness of the line but it fell a little flat so I ended up adding hoisin, rice vinegar and some sweet chili peppers for some spicy heat.  It may sound bad but I think I prefer these lettuce wraps instead.

Two other awesome things about my day – a 5 SmartPoints chocolate covered Easter Bunny – so worth it! And The Husband grilled us up one delicious dinner – I just had to make the salad.

B: 1 egg scrambled (2 SP), 2 PC’s Trader Joe’s Peppered Turkey Bacon (2 SP), cutie

S: Tall Nonfat Cappuccino with caramel on top (2 SP), banana

L: 1 svg Spicy Larb Wraps (5 SP), 1/2 Trader Joe’s Cashews bag (3 SP), grapes

Dessert: Chocolate Marshmallow Bunny! (5 SP)

S: Trader Joe’s Lite string cheese (2 SP), cutie

D: 3 oz grilled tri tip (3 SP), 1/3 cup Jasmin rice (2 SP), 1 1/2 c tossed salad w apple balsamic & olive oil (2 SP)

    I made lettuce wraps like your old recipe last night (and just leftovers for lunch). I love them so much – don’t think that’s bad at allll.

    Probably 75% of our meat consumption is turkey because it is versatile and we truly enjoy it. For some reason I’ve found I like the lettuce wraps made with ground chicken breasts better. It makes a big difference. I’d like to know what you think if you try it.
