Hi all! How was your Monday? My day started pretty early and really was a total Monday. The highlight of my day was definitely “Walking to Wok” with my coworker to earn our lunch and balancing out my day with a tasty dinner….even if I didn’t get there as planned.
My day started with 2 Crustless Kale Quiche plus 1/2 of one of the best Sumo oranges yet. (5 sp)I managed to have enough time to grab a tall nonfat cappuccino before my meetings started. (2 sp)
Half way through my morning, I snacked on a banana to keep my lunch in check.Last week my coworker asked me if I wanted to get in our steps walking to Wok aka Work of Flame.
I was totally down for that.
Starters – I had a few of these.Then, 3, yep, 3 chicken potstickers….I love them (5 sp).
Hot n sour soup (2 sp)
I felt so proud getting all veggies as my two sides to go with Kung Pao chicken. It was too much to finish. (8 sp) plus 1 for my fortune cookie.
It wasn’t until I started my drive home that I realized….##+$@!!, I missed tracking the potstickers when I pretracked my day earlier.
I did the math and realized I needed to change up my dinner plans to stay on track. I went through so many ideas before settling on creating this easy Chicken Fajita Salad.
I heated my pan to medium high and added a little avocado oil. I sauteed red & green bell pepper, onion, mushrooms and garlic for 3-4 minutes.Until everything softens. I sprinkled the veggie mix with homemade taco seasoning and cooked a minute longer.
Set it aside.To the same pan, I browned chicken that I also tossed in homemade taco seasoning until cooked through, about 4-5 minutes.
Return the veggie mix cooking 1 minute.
Remove from heat, sprinkle with cilantro and lime juice.
Then, I built our salads – mixed greens and romaine with carrot, tomatoes, 1/8 avocado, a big scoop of fajita chicken mix, 2 Tbsp 2% sharp, a couple crushed tortilla chips and hot sauce.

Also, I made your Banana Berry Muffins for the first time the other day and I love them! Thank you for the recipe!! One addition I made was adding about a 1/4 of a 1/4 cup of Trader Joe’s Super Seed and Ancient Grain blend in place of that amount of the flax meal. It gave the muffins a nice nutty crunch.
