“Egg Roll”

Happy Sunday all!  This morning we were up at 6am and out the door to go to the Alameda Antique Faire, one of The Husband’s favorite places to go each month.

I honestly couldn’t fathom eating anything this morning so I defaulted to my goto I don’t want to eat breakfast.

Grande Nonfat Decaf Latte with Caramel Drizzle and a Banana. (SF) – 3 points+

A few hours later I was pretty much starving.  After scouring all the food truck vendors, I found one who was willing to “custom” make my breakfast burrito.  She even “fried” my egg in nonstick spray only.

She called this an “Egg Roll” which I thought was pretty cute since it was a “fried’ egg with salsa rolled up in a tortilla. (SF + 2 WPA for the small flour tortilla) – 4 points+

I like the idea and am totally stealing it for a quick breakfast on the go Open-mouthed smile

We spent 5 hours walking around the faire before heading over to Boudin Bakery for lunch.  I picked the Boudin Special ~ Soup and Salad.

Their Butternut Squash Soup  was so incredibly flavorful, perfectly salty and sweet.  I loved the crunch and chew factor from the cranberries and spiced walnuts. – (SF+ 2 WPA for the toppers) – 7 points+

I paired it with their Spring Greens Salad with balsamic on the side.  This is one of my favorite salads and I am not even a stinky cheese fan.  The feta adds a delicious saltiness like parmesan that goes perfectly with the tart cranberries and spicy, roasted walnuts. (SF + 3 WPA) – 3 points+

We spent the afternoon getting caught up on Chopped Grill Masters which totally had me craving salty potato chips ~ not even sure how that correlates lol.

Instead I satisfied my craving with the Sunomono Cucumber Salad I made for us yesterday.  I LOVE this salad straight up and on top of salads using the vinegars for my dressing.

I had 1/4 cup with a light string cheese. (SF) – 2 points+

Last night when I grilled up the chicken, I made sure to grill up a Tri Tip just so we could have it tonight for dinner.  We built delicious BBQ Tri Tip Salads in about 10 minutes.

In the mix (SF) – 5 points+:

  • 2 cup organic mixed greens with red cabbage and carrots
  • 1/4 cup edamame, corn and red pepper mix (I get it from Trader Joe’s)
  • 1/4 cup cucumber
  • 1/4 cup snap peas
  • a handful of cherry tomatoes and a sprinkle of green onions
  • 1 reduced fat Sargento colby cheese stick
  • 3 oz BBQ Tri Tip tossed in blackberry bbq sauce

My 8 day Active Link Assessment is up tomorrow! The results and my 12 week challenge coming up tomorrow along with this week’s menu.

STATS (12 am – 7 pm)

  • 2,360 calories burned
  • 10,203 steps taken
  • 7 WPA used, 42 WPA remaining (24 daily points+)

I definitely see some watermelon in my future tonight when we watch a movie.

    That salad looks delicious! Are you counting your reduced fat string cheese as a simply filling food?

      Hi Lindsey,

      Yes, I do. It is one “tweak” I do because I feel it is healthier than fat free, an easy goto snack and I can keep it in check.

      Hi Jennifer,

      I pretty much use all 49 of my WPA for non-simply filling foods each week. I try to resist using my activity points earned when I can. However, I do use them if I run out of WPA and need them.

    Ok..I have to ask. I’ve been reading your blog for quite a while now…wishing I could be as diligent as you are. I’m struggling with even getting started and I have lots to lose. You seem to eat salads EVERY day…don’t you tire of lettuce and that type of food? I can manage one or two a week but every day would seem like prison food…how do you do it?

      Hi Cindy,

      Thanks for the comment. You know I actually do at times get tired of salads and when I do, I mix it up. For me it is all about having really good dressing, alot of textures (adding in red/white cabbage, carrots, snap peas, cucumber, chick peas, etc.) and not being afraid to add in a few “treats” in my salads. I love adding in dried fruit and/or nuts ~ this often makes the difference of whether or not I will eat a salad or not. I’ve even added in fried onions or won tons before. If I am tired of mixed greens, then, I switch to broccoli slaw and use spicy peanut dressing. I cannot have more than one salad a day most days ~ it’s just too much for me. The other thing too is not all salads have to be lettuce. You can mix it up by making three bean salad, kale salad, asparagus, corn, chickpea salad. When I cannot eat salad, I will have my veggies another way. Steam them, grill them, mix them in soups or pasta or stir fry over rice. The key is really having variety and experimenting. Whenever you feel like you are in a rut, then, find a new recipe that gets you excited and try it. Do that for a few weeks and the rut usually goes away.

      I also make sure I add a fruit and/or veggie (sometimes it is all fruit) to every meal or snack to bulk it up so I do not get hungry as fast.

      It really is all about taking it one meal at a time and adding in the things you love. If you love avocado on a salad and it will make you want to eat a salad – add it. It is worth the points+ in the long run.

      Hang in there…..you will get in a groove. Let all your small successes add up and before you know it, you will be at your goal.

    I’m on the new Freestyle Program and was wondering if the Healthy Egg Roll’s corn tortilla still has only two points on the Freestyle program. I don’t know what WPA means but I assume ii’s a WWP.
