Fall in a bowl

Happy Friday Eve all!  Thanks for sharing all your recipe ideas on what you would cook with the Farm Fresh To You CSA Box I received.  While I know they deliver all over the U.S, I wish I could tell them they need to deliver to every single area so you all could receive the same veggie and fruit goodness. 

Do you ever sit back and look at your day thinking ~ man, that was one, delicious day that I cannot wait to repeat?  That was totally me today and the best part is there are leftovers for tomorrow!

I really tried to convince myself to have something else for breakfast when I woke up this morning.  The thing is….I was craving two things ~ coffee & a “Healthy Egg Roll” .

Sometimes, you just have to go with what sounds good (SF + 1 WPA) – 4 points+

My morning flew by as I worked away and I never even thought of a mid morning snack.  Just another reason why starting your day with protein is such a great idea.

For lunch, I had two things on my mind ~ Delicata Squash….

and these Pasta Prima Butternut Squash Ravioli’s that I picked up at Sam’s Club..

I have been craving these Brown Buttered Butternut Squash Ravioli’s ever since I made them, but, thought I’d venture out to create something new for today’s lunch.

I decided to satisfy every single sense I was craving ~ Sweet Butternut & Delicata squashes, Savory – thyme & mushrooms, Sour – dried cranberries, Salty – Canadian Bacon and Crunchy – roasted California Walnuts.

You can totally taste the sage-y butternut squash inside the chewy ravioli’s and the Delicata squash with the mushrooms, cranberries, bacon and walnuts made this like Fall in a Bowl. 

110% worth the (SF+9 WPA) – 9 points+ for the entire bowl. (the recipe is coming up tomorrow).

I rounded out lunch with a simple side salad topped with 1 Tbsp Newman’s Lite Lime Vinaigrette. (SF+ 1 WPA) – 1 points+

Late afternoon I decided to try the Mixed Berry 0% Greek Yoplait Yogurt I picked up.

I do think it’s pretty cool that these Yoplait Yogurts are only 2 points+ and fit into Simply Filling too.

They even made sure to pack each cup full of real fruit you can see and taste.

I also had a sprig of these super crunchy, sweet and juicy Holiday Grapes.

For dinner, I decided to revisit a recipe I used to make all the time, but, haven’t made in over a year ~ My Lazy Chicken Enchiladas in Red Sauce.

I had a friend in college who would make the best rolled chicken enchiladas you will ever eat and they turned out perfectly every single time.

Every single time I’d try to make chicken enchiladas the tortilla would break and I would end up making a “casserole” of sorts instead.

It sort of became a joke in my family and everyone named these Lazy Chicken Enchiladas with Red Sauce since I never rolled them and they never really “looked” like enchiladas.

I actually make a version of Lazy Chicken Enchiladas with White Sauce that I just realized I need to post that recipe too.

Delicious straight up or let your husband decorate your plate with cilantro, jalapenos and sour cream Winking smile He was so proud and did a professional job (SF+ 2 WPA) – 6 points+

Served with a side of Zucchini Bites (SF) – 1 points+.

STATS (12 am – 9 pm)

  • 2,024 calories burned
  • 3,342 steps taken
  • 13 WPA used, 11 WPA remaining, (23 daily points+)
  • AL ~ 0 AP – 43% – I think if he could tell me to get off my rear, he would!

    Danica- So how do you like “AL” as compared to other devices you’ve tried? Have you ever worn all at once to compare 🙂

      Hi Barb,

      You know, I wear my Body Media and Active Link together every day. I always say one day I will wear my Body Bugg as well just so I can compare them all….but haven’t yet lol. I do like them all for different reasons, but, they have one thing in common. They all motivate me to move more to reach my daily targets which I need.

    LORD, your FALL IN A BOWL looks goooooooooood! I can’t wait for the recipe so I can make it. Those Lazy Enchiladas look good too. I am so hungry now. Note to self: read Danica’s blog AFTER lunch! LOL! Thanks for the inspiration 🙂

    I have a silly questin for you. When you have a casserole how is the best way to determine the portion size? Thanks so much

      HI Patty,

      I usually will take the total points+ value of the dish and divide it by the total number of squares I plan on cutting it into. In a 9 x 13 dish, I usually find that 6-8 servings works well and is a decent portion size.

      Cut the pan in half lengthwise, then, divide into 3 for 6 or 4 for 8.
