I was up early to get my C25K on this morning checking off a 33 minute jog/walk. This really is my favorite way to start the day even if I don’t always get to.
Post workout breakfast involved a healthy eggroll and berries (3 sp).I grabbed a grande iced nonfat latte on my drive in (3 sp).
I have really been craving Chinese food and today I decided to get my fix with a compromise.
Hot & Sour Soup (2 sp).I knew I wanted potstickers and while I “could” eat all of them, I didn’t – I shared!
5 SmartPoints for 3.My compromise – skipping the rice and noodles eating only Kung Pao Chicken and steamed veggies (8 sp).
I knew today was a bit about feeding my craving and a bit about feeding my feelings. It has been such a whirlwind of a month professionally and personally. Usually my workouts help me push through but today I think I just got caught up being overehelmed by it all. I think it’s important to recognize it even if you still give into it. The daily battle is real all!
I made this Fancy Pants Recipe for Caprese Pesto Pizza for dinner tonight. It turned out to be even better than I imagined.
Preheat your oven to 450 with the racks on the top shelf.
Top one to two flatbrrads with about 1-2 Tbsp pesto.Then, halved cherry tomatoes and a little pulled fresh mozzarella.
Bake 8-10 minutes until the cheese melts. Top with freshly chopped basil.
Toss arugula with a little olive oil, balsamic vinegar, salt and pepper. Sprinkle on top of pizza with a couple tablespoons chopped walnuts.
Slice into 6 pieces and serve with the extra arugula on the side. This pizza is bright, sweet, creamy, nutty and just plain good. I love how each ingredient plays a role in adding a different flavor. What’s not to love about pesto topped cheesy flatbread.
