Hi all! I hope your holiday turned out to be everything you wanted it to be. We were up early and ready to open presents!
Is it wierd that I got super excited when The Husband turned on Fox 40 news while I made coffee and they had a Yule log with Christmas music playing?? Ok maybe it’s even funnier that I proceeded to take a picture of it lol. Don’t worry I am not posting that picture!
Instead, I am sharing a few of my favorite gifts we got. I love fun kitchen tools like….
My Dino Ladle, Pastasauraus Scooper and monster pasta colander….I can’t wait to make crunchy tacos with these Tricertaco holders or pizza with our pizza peddler.Yep, I am totally like a 6 year old and I can admit it but “these” cool kitchen things make me smile and we will be using them.After the unwrapping frenzy, I got to work on a new Christmas casserole I’ve been pondering.
It’s sort of like a pigs in a blanket casserole with the star ingredient being these Trader Joe’s Maple Chicken Breakfast sausages.Plus mushrooms….A little red, green and savory fresh herbs.Packed with eggy pancake batter and cheese.Baked into 8 delicious squares that come in at 4 Smartpoints each. (Recipe coming up soon!)Instead of having a big lunch today, we decided to have snacks and save room for dinner.
This totally gave me a reason to make these Sweet BBQ Cajun Meatballs I’ve been eyeing.
I lightened up my version using lean ground turkey, fat free milk and adding a bit of red, white and green freshness.I used Simply Apricot jam versus Beach and kept them warm in my mini crockpot.
Sweet, salty, spicy and totally addictive!The entire appetizer spread….I love snacks!My strategy was to only use my plate to eat anything…this makes you totally aware of how many times you go back. I went back twice having 5 meatballs, more veggies and a little but of everything else.It has been way too long since we have had Simple Glazed Ham, Au Gratin Potatoes, Green Beans with bacon, and Hawaiian rolls.
While not totally pretty, this dinner was fantastic and I am proud I only had this plate.Plus one of these WW these Lemon Pudding cakes for dessert.I feel good about how I ate on Christmas day eating in moderation and never getting stuffed. I did get in 10K steps today but did not point out my day yet. I plan to stay on track for the balance of this week. We have healthy leftovers (yay!) and one more holiday celebration to go.
