Get ready for Simply Filling Month: Week 1 Menu

I cannot believe that the year is half over and tomorrow marks the start of my July Simply Filling Month New Year’s Resolution!  I am actually looking forward to challenging myself to get Simply Creative with Simply Filling this year.  I think this week will also mark the Grand Finale of my deadlines and life should go back to normal (fingers crossed!)

For all those wondering, here is a recap I did last year for how I work the Simply Filling Technique and the “rules” I’ll be following this month.  I do post my tracker to show both methods since I have followers who use both programs.  For those counting Daily Points+, I show it as # Points+ for each meal.  For those following Simply Filling, I will show SF + # WPA if there are any WPA used for non-simply filling foods.

All that being said, I am ready for some good, clean, healthy eats and getting back into the kitchen cooking.  I finally braved the scale this morning heading back to my Weight Watcher’s meetings and I am proud to say that my gain was not as big as my head made it think.  I am up 2.4 lbs. but in all honesty, I’ve earned it with our Vegas Vacation and pretty much taking the month off from my usual eating and workout routine.  I feel mentally ready to get back into my groove.

Since The Husband is waiting for me to watch Grown Up’s with him, tonight’s post is going to be quick ~ a couple of weekend highlights & this week’s menu.

One highlight from this weekend ~ This super cute Fruit Salad my sister made for my other nieces baby shower – Love it!

MY WEEKLY MENUS ARE BACK ~ SIMPLY FILLING WEEK 1

    • Summer Garden Pasta with No Cook Tomato Basil Sauce, salad
    • Turkey & Veggie Kabobs, Corn or Brown Rice
    • Leftover Turkey & Veggie Kabob’s with corn turned into BIG Salads
    • BBQ Pork Chops, Kale, Healthy Potato Salad
    • Individual 7-Layer Dip & chips!
    • Grilled Shrimp Salads

    Thanks for your Vegas tips!!! We were there last week for the hubby’s national convention. I gained a few pounds, also, while I was there, so I’m ready to get back to healthy eating this week after spending the last 10 days on the road!!!

    YEAH! Weekly Menu…you know it’s my very favorite post 🙂 Since you braved the scale, I guess it’s my turn! Although we did eat out a few times this week-end, we were able to only do 2 meals on those days, so saved a few calories! Back on the wagon this week for sure 🙂

    Happy July!

    What a great recipe for the week. Think we’ll try it with whole grain pasta! We won’t be cooking for July 4th because we have a party to go to that night, but, now that I think of it, I may make a dish to take so that I know I’ll have something that is SF!! Great idea. Good luck on your first week back OP!!

    On your turkey and veggie kabobs, do you grill them or bake them. If grilled, how long? Also could The Husband give any tips on grilling pork chops? This is the first year we’ve been trying to grill as much as possible. We tried the thick chops from Cosco on the grill, but it wasn’t very successful – dry and tough. Glad to have you posting again.
