Getting a little “Hard CORE”

Happy Friday Eve all!!!  Thanks so much for your feedback regarding what I should do ~ I really do appreciate it and I never realized how much you loved Danica’s Daily just as is!  Maybe sometimes you just need to know people enjoy your rambles 😀

Because I LOVE you all right back, I think I will stick with what you enjoy reading.  I really do have fun rambling on, sharing my eats, recipes, The Husband’s Quirkness, pictures and whatever sounds good that day.

UMMMM, so be scared, I have A LOT to say today 😉

Speaking of The Husband’s goofiness….this was on the wall when I came home today.

Football Season Starts Today

He honestly goes through withdrawals from the time Football ends until it begins again.  I guess I can relate because I am THAT WAY about Farmer’s Market Season  😉

Have I ever told you all I am a breakfast person?  As in I HAVE to have it or I may get a little grouchy….it’s true LOL.

I managed to put together my breakfast, lunch and snacks this morning in 5 minutes tossing them all in my Trader Joe’s back.  It’s not fancy, but, it was all delicious and fit within my September Goals!

I feel like I need to clean up my act a little bit and get back to WHOLE, CLEAN foods, so I have set mini goals each week this month.

This week goes something like this ~ (A little Weight Watchers “HARD” CORE) I find that sometimes it is easier to focus on healthy guidelines/Simply Filling Foods than actual points. 

If you put so much of the good stuff in there isn’t really much room for the not so good stuff.

Breakfast ~ 1/2 cup veggies with 2 oz protein and a dairy

Snacks ~ 1/2 cup veggies plus 1 oz of protein or maybe veggies/nuts or any combination

Lunch & Dinner ~ 3 oz protein, 2 cups of veggies, 2 servings healthy fat, 1 svg dairy

Dessert ~ Optional, but, only eaten if truly hungry, around 100 calories (2 pts)

Insert lots and lots of water and my vitamins daily too!

I think my co-workers think I am crazy that I make OMELETS in the microwave, but, it’s SO EASY!

1.  Start off by spraying a bowl with nonstick spray.

2.  Add your favorite OMELET ingredients.  I had time to chop up a zucchini and a mini roma then tossed them with 1/2 cup Egg Beaters, 2 Tbsp LF Mexican Cheese, TAPATIO Hot Sauce, sea salt and pepper.

**If you do not have time to chop, whirl it all up in your Magic Bullet pulsating to chop it up.  It doesn’t look pretty, but, it works just the same.

Microwave for 2 minutes.

Easy Scrambled Eggs

Tadah!!! 2 step, 2 minute omelet (ok, well scramble because I mixed it before I took the picture). (2 pts)

Plus a little dairy ~ Iced Nonfat Decaf Latte (2 pts)

2 Minute Omelet

Mid morning snackage ~ TJ’s Lite String Cheese & Cucumber Slices (1 point)

Have you all seen these new Wholly Guacamole 100 Calorie Packs?  I LOVE them because they come pretty close to tasting like homemade guacamole, but, also because they are the perfect portion with nothing to save that turns brown (2 pts!)

2 Minute (7 point) Salad too 😀

Simple Chicken Salad

Organic Mixed Greens & Cherry Tomatoes

2 Tbsp Garbanzo Beans

3 oz grilled chicken

100 cal Guacamole

2 Tbsp Newman’s Lite Lime Vinaigrette

The Husband asked me to make him some jello this week and I have secretly been stealing it each day!

 Jello with Whipped Cream

I topped it with HOMEMADE WHIPPED CREAM! It’s way better for you than the chemicals that make up cool whip and so incredibly easy to make.

HERE IS HOW TO MAKE YOUR OWN WHIPPED CREAM

1 cup heavy whipping cream

1 – 1 1/2 Tbsp Agave Nectar

1 tsp Good Quality Vanilla Extract

Beat on medium speed for 1-2 minutes or until you reach “whipped cream” consistency.  Store covered in the fridge.

Makes16 servings, 1 tablespoon each.  1 point!

We went to Vasquez for dinner since we haven’t gone in over a month ~ crazy!!

I ordered a Spicy Chicken Taco Salad with Guacamole, then, used their hot sauce as my dressing. (10 point estimate and worth every one) ~ it’s all about their chicken 😀

Mine is to lose 15 lbs….so far, drum roll please….I am down 5.6 lbs 😀

    Congrats on being down 5lbs!! My goals for september are to finish up my nutrition and wellness cert., drink more water, and enjoy the winter vegies!!

    You GO Danica!! LOVE LOVE all your posts, you help put me back on the right track. You always have yummy recipes too! My September goal is to lose these last 8 lbs before my 40th bday! I am now down 14lbs. I tryed a ZUmba class it was awesome! Keep up your wonderful bloging and great food ideas!

    Mmm, I LOVE those little packets of guacamole (for all the reasons you mentioned). Congratulations on your weight loss, by the way. Maybe they aren’t September goals, exactly, but I’m planning to finish reading The Chronicles of Narnia and Women, Food, and God and get back into a regular yoga practice (and work toward dropping the extra pounds that have been hanging around for far too long.)

    agreed the microwave is wayyy easy for omelets. I’m trying to do 1 egg and then egg beaters because of it caesin in eggs which is good for you.

    oh my gosh i LOVE jay’s sign because marshall is the same way. he got home from work and was almost singing.. SO excited to watch football. i don’t really care for it but it is fun to see him get excited.

    your meals all look great, i need to focus on cleaner eating. i ONLY whip my own cream. i refuse to buy or eat the pre-made stuff. my mom always whipped it growing up so i guess that is where my picky demeanor comes from.

    I’m with you on the clean eats.. many bbq’s and happy hours this summer. Just starting to get back to my normal eats.
