Hi all! One thing about getting up and out the door way too early is catching beautiful sunrises like this. I totally think of Bob Roos with the fluffy clouds, happy trees and moon peeking out.In my rush, I forgot to snap breakfast but it looked just like this in a togo container.
My lasta two Crustless Kale Quiche Muffins for 5 Smartpoints with blueberries.I savored my tall nonfat cappuccino on my drive in (2 sp). Mid morning I grabbed a banana for snack.
I fit in a nice long walk at lunch before coming back to my “ghost fork” salad. Isn’t it funny how my fork looks like it’s invisible? I am not sure why as it’s the same color as my container.
Mixed greens, 1/2 oz 2% cheddar, leftover chicken fajitas, hot sauce and 7 chili lime tortilla chips crushed for crunch. (3 sp).I really wanted dessert all day long today and honestly was pondering the pink cake pop at Starbucks. I am so glad I looked up the points because it’s not worth 9 to me.
As a compromise, I had 2 Dove Promises for dessert and that totally did the trick (4 sp).The Husband has been craving these Instant Pot Ribs ever since I made them. Tonight I cooked up another batch just using salt & pepper versus rub and they were just as amazing.
2 ribs plus 1 serving crispy, garlic smashed potatoes and snap peas (9 sp).
