Ginger Scallion Meatballs Over Rice

Hi all! Today turned out to be a much better day that happened to also include some tasty eats. I have to say I cannot wait for the smoke to clear so I can back to walking in the outdoors. I actually miss it.

Breakfast was eggsellent! Healthy Eggroll (Mission Extra Thin Yellow Corn Tortilla, Sargento RF cheddar, Fried Egg, Sriracha) – 5 spPaired some grapes. I actually brought my lunch today but was easily  convinced to have leftover tacos from our taco party from Villa Corona.

2 chicken tacos with lettuce, salsa, a little rice and beans plus chips – 15 spWe made the first of this week’s Blue Apron meals – Ginger Scallion Meatballs & Rice with Bok Choy. I have to admit I was a little Leary given my recent beef aversion but I was pleasantly surprised.

I had never heard of sushi sauce but now I think I want to find it. Sushi sauce is made of soy sauce, dates and ginger.Im feeling pretty proud I successfully cooked rice in a pan as I’ve always used my rice cooker.While the rice cooks, prep your veggies. I actually did agree with separating the white parts from the green parts of the scallions.I pickled the radishes with a little rice wine vinegar, agave, sea salt and pepper.

I still do not really like radishes, even when pickled.The meatballs only take a few ingredients – ginger, white scallions bits, panko, beef, salt & pepper.I “fried” them in nonstick spray until browned – no oil required as the meat has enough.Add the bok choy, a little rice wine vinegar, sushi sauce and water. Steam until the meatballs are cooked through and bok choy softens. I cooked until the sauce thickened up a bit too, about 5-7 minutes.Sprinkle with radishes and the green scallions. My bowl was 1/2 a serving and 10 Smartpoints.

I actually loved it – the meatballs were gingery and tender while the sushi sauce made for a great sweet glaze when paired with the tangy radishes. I’d actually make this again.30 Daily Smartpoints, 6K steps

I have 2 more Blue Apron meals to make then I’ll be giving away 5 boxes.

    I recommend roasting radishes in the oven. They come out totally different, almost like potatoes!!
