Speaking of pumpkins and fall….This morning started off with my fun new pumpkin placemat
And a bowl of bran flakes topped with a banana and 1 cup ff milk. (SF) – 5 points+
We spent the morning hanging around the house catching up on things before heading over to the last Farmer’s Market of the season and grabbing lunch at The Joy of Eating.
Teriyaki Chicken Salad with Homemade Sesame Miso Dressing on the side! I am not sure what it is about this salad, but, I totally crave it at times (SF + 2 WPA for the dressing) – 8 points+
After stocking up for the week, we stopped at Starbuck’s for an Afternoon Coffee….
Only, I had afternoon “tea” with a Tall, Nonfat Chai Tea Latte (SF + 2 WPA) – 4 points+
I spent the afternoon in the kitchen cooking up a few things for the week.
I made up Salsa Fresca with the last of our Farmer’s Market tomatoes, peppers & cilantro.
Whipped up a batch of 2 points+ & 100% Simply Filling Turkey Meatloaf Muffins for quick grab and go protein packed snacks. (recipe coming up this week).
While the “muffins” cooked, I prepared a batch of Healthy Pumpkin Butter to go with the mini bagels & cream cheese at my Weight Watchers meeting tomorrow.
I couldn’t wait to dive into a Turkey Meatloaf Muffin for dinner. I started off with just one to see if it was enough figuring I’d go back for another if I was still hungry.
I didn’t need another muffin because I was too busy chowing down on my Delicata Squash!
Remember when I talked about this squash I bought a few weeks back….
Hands down, the absolutely BEST squash I’ve ever had in my life….skin & all. I’ll admit I was a little leary about eating the skin, but, it softens as it cooks and makes this squash sautéed in olive oil with onion and a little sea salt – amazing.
It’s slightly sweet like butternut, but, a little like spaghetti squash flavor wise. (SF) – 2 points+
STATS (12am – 10 pm):
- 2,592 calories burned
- 7,772 steps taken
- 4 WPA used, 4 WPA remaining (21 daily points+)
- AL stats ~ 3 activity points, 86%

I’m glad you’re promoting fair trade certified coffee. I pay “extra” for mine happily knowing that I’m supporting another’s equitable trade. And I didn’t know you could get pumpkin spice fair trade specified! I hope I win the mini Keurig! 😉

I am curious – which bran flakes are considered a Simply Filling food? When I look them up in my book or on the computer they all say 3 points+ no beautiful green triangle anywhere! lol

The pumpkin spice is my favorite coffee. I buy extra at the end of the season so I can drink it year round. I wish it was available all year!

Love the Pumpkin Spice coffee. I’ve been drinking it with the Pumpkin flavored International Delights Creamer. So worth taking 1 pt for. It’s awesome brewed over iced, too! So excited about the contest…would love a Keurig for my office!
