Happy Monday all! I am so proud of how today went down even though it was rough. Yes, I am totally admitting having just one cup of coffee and no Starbucks was hard. But, I did it and that’s one day down!
Before heading out this morning, I whipped up a healthy eggroll (3 sp) with some cantaloupe. Not just any cantaloupe but Origami Cantaloupe. Our company actually grew the seeds that makes this melon.The other goal I checked off was getting in some activity. I put on my book on tape and headed out in our 90 degrees of sunshine for a 45 minute walk along the trails by work. I was so thankful for the shady patches because it was hot.
I came back to a quick 5 Smartpount lunch that totally hit the spot.
1 slice butter bread topped with 1 Tbsp almond butter (5 sp), banana and strawberries. Plus banana berries and cucumber chips on the side.Late afternoon, I snacked on this yogurt and a nectarine (3 sp).
Our dinner tonight was so good as in you all have to try the Greek Chicken Salad Recipe. It’s pretty simple to make, packed with so much flavor and fun things to eat.
Here is my “healthy” spin on this recipe.
Combine 1/3 cup olive oil,zest and juice of 1 lemon, 2 Tbsp red wine vinegar, 1/3 cup 0% Greek yogurt, 1 garlic cloves, 1/2 diced shallot and 1 Tbsp oregano. Chill until ready to use. I seasoned two chicken breasts with granulated garlic, onion, oregano, sea salt and pepper. Drizzle with olive oil or spray with non-stick spray. Griil over medium heat for 20 minutes.
I was thinking my vegetarian friends could sub roasted chickpeas or potatoes.While the chicken cooks, chop the veggies.
Build your own Greek salad serving all the toppings on the side.
Greens topped with pepperoncini.Topped with zero point chicken, zero point fat free feta and a few sliced kalamata olives.
Drizzle with a few Tbsp dressing and dive into the tangy, herby, crunchy Greek goodness. My entire bowl is 5 WWFreestyle Smartpoints.
