Happy Memorial day all! I think summer weather has officially arrived with today heating up to 96 degrees. That didn’t stop us from getting out to enjoy the sunshine or grilling again tonight.
Before heading out for our hike, I whipped up this delicious breakfast.
3 Aidells breakfast chicken apple Sausage links (4 sp), 2 scrambled eggs, 2/3 cup Ore Ida potatoes O’Brien fried in 1 tsp avocado oil (2 sp).I think we actually planned our day backwards as we grabbed Starbucks and ran a few errands too. We probably should’ve hiked first thing.
Grande iced Nonfat Latte with caramel on top (3 sp).It was super hot by the time we made it to loop the lagoon. We skipped the tower and settled on 2 miles around the lake.
I couldn’t resist stopping to take a picture of this turtle basking in the sun.We had leftovers for lunch – 1 Cheeseburger Sliders (5 sp), plus salad topped with 1 Tbsp balsamic vinaigrette (1 sp).I had a big bowl of fruit for dessert.To get out of the heat, we went to see the movie, Overboard which we both thought was hilarious. I grabbed a small container to pour out my 3 cups of popcorn before The Husband buttered his batch (5 sp).
Dinner tonight exceeded my expectations. We cooked the WW Grilled Steak with Balsamic that was in the week’s Weekly Handout.
This steak is super easy to marinate and cook.
I picked lemon thyme and rosemary from our garden then tossed it with a clove of garlic and olive oil.Spread it over the steak and season with salt & pepper. Let marinate for 15 minutes up to one hour.Your grill time will depend on your steak. I used these individual tried tip steaks and grilled them for 5-7 minutes on each side. I brushed them with the balsamic glaze during the last two minutes.While the steak and our foil packet asparagus and corn cooked, I sauteed these mushrooms we bought at the farmers market.I finished them with a little of the balsamic glaze with garlic salt and pepper.This all was so good! Yep, I totally said that about this grilled beef.
The balsamic glaze adds a richness like a sweeter steak sauce and really brings out the herby garlicky goodness.
