Happy Weekend All! Our weekend started off on a fun note as I whipped up some delicious Grilled Tri Tip Carne Asada Steak Salads with homemade Chile Lime Tortilla Chips before we headed out of town to watch the Cal Bears Football Team! Too bad they lost to UNR, but, it was still a crazy and fun game to watch live.

The star of today’s breakfast was definitely my FAVORITE Agave Nectar out there, X-Agave! I think what makes their agave so good is the flavor ~ it’s sort of like the difference in having a store bought tomato versus a home grown one. It’s thick, caramel like, rich and honestly I can eat if off a spoon 😀
Topped with extra deliciousness ~ Super Nutty Granola topping! (7 pts)
My breakfast veggie of the day was sweet, crunchy orange bell pepper bites (0 pts).
All washed down with a homemade Cafe Misto (1 cup ff milk & coffee) (2 pts)
Mid-Morning I had probably one of the coolest packages ever arrive from the fantastic folks at WHOLLY GUACAMOLE! They noticed my insane LOVE of AVOCADO and all things guacamole, including their cool 100 calorie packs.
How cute is this card they included with a bunch of fun ideas on how to use their products.
I honestly never knew they had so many Wholly Guacamole products, but, I am pretty sure I am going to be on a quest to find them all.
I was completely surprised to see all the GREEN Guacamole LOVE they sent my way.

As much as I could easily spend every day devouring guacamole, I am so glad that you can freeze their guacamole and having it come out just as though you whipped up a batch of fresh guac.
They also included my other addiction ~ Salsa in medium and mild plus Queso ~ mmmmm, I LOVE anything with cheese!

I completely abandoned all plans I had for making lunch because I couldn’t wait to dig into my Guacamole Goodies. Plus I have been wanting to re-create that Carne Asada Steak that we keep getting from Sam’s Club. I never ralized it was so easy to make.
GRILLED TRI TIP CARNE ASADA
INGREDIENTS
2 lbs Tri Tip, Flank Steak or other lean thinly sliced beef
1 Tbsp Extra Virgin Olive Oil
1/2 Lime, juiced
1/2 Tbsp Agave Nectar or honey
1 tsp ground cumin
2 tsp Mrs. Dash Fiesta Lime Spice
1/2 tsp chili powder
1/4 tsp paprika
1/4 tsp black pepper
1/4 tsp sea salt
INSTRUCTIONS
1. If using tri tip or flank steak, butterfly by slicing evenly in half, but leaving 1 inch so that it remains as one piece of meat. Place in a 9×13 baking dish and set aside.
2. Whisk together Olive Oil, lime juice and agave nectar. Pour half the oil on each side of the steak and rub all over to evenly distribute.
3. Combine Cumin through Sea Salt and sprinkle/rub/massage all over both sides of the steak.
4. Grill over medium heat, about 10-15 minutes on each side or until desired doneness is achieved. Let rest for 10 minutes before slicing thinly across the grain.
This is excellent served straight up, in burritos, tacos and salads. Enjoy!

WHOLLY GUACAMOLE PICO DOUBLE DIP!
I LOVE the big chunks of AVOCADO that cool off the spicy pico. I honestly think this might be my favorite Wholly Guacamole yet ~ it really does taste like it’s homemade vs store bought.

I whipped up a batch of homemade chile lime tortilla chips for some crunchy, salty, dipping. I used Chile Lime Tortillas, “fried” them, then, squeeze a little fresh lime and rock sea salt on top.

I really wanted Michael’s Deli for dinner when we got to Reno but they were closed :( After checking out the Mackay Stadium Website, i thought, I could totally get something healthy to eat ~ it listed BBQ, grilled chicken sandwiches, sandwiches, etc. They lie 🙁
After looping the stadium, the ONLY thing I could find that was close to healthy was a premade Port of Subs Turkey/Provolone Sandwich. It sucked really but it was better than having a hot dog, nachos or a pretzel. (8 pts)
I was pretty excited that I convinced The Husband to walk to and home from Harrah’s to the stadium ~ It’s 2 1/2 miles each way and is the building with the red dots in the picture below 🙂
We are heading out of Reno into Lake Tahoe now – I LOVE Tahoe so much more than Reno ~ It’s Beautiful!
