Happy Birthday DD with some Open Sky Deals!

February 22, 2010 by DanicasDaily 23 Comments

Happy Bloggiversary to me, Happy Bloggiversary to me!!  So, is it bad when you miss your own Bloggiversary?! Danica’s Daily (DD) was officially 1 year old yesterday ~ Yeahhhh!!!  It’s crazy to think it all started with one reader (my friend!) and THIS POST! This year has flown by yet, it honestly feels like DD is much more grown up than one year, LOL.  Anyway…just had to share my excitement with all of you…..now Danica’s Daily is officially going on TWO YEARS (The Husband always teases me for saying it like that, but, it’s true, I am now in year two). 🙂

Today is the beginning on a bunch of NEW Breakfast ideas thanks to all of you!  I was really excited for my breakfast this morning (woot woot!) ~ a first in a really long time – yeah!

You all might think I went a little bonkers with my wafflewich and mixed up your ideas, but, I put together everything that sounded good ~ sweet, salty and savory all in one.

I started with TWO toasted Kashi Strawberry Flax Protein Waffles (I would’ve used plain but this is what I had).  Then, topped then with 1/3 c of Egg Beaters seasoned with PINK SEA SALT  & Freshly Ground Pepper.

* I cooked my eggs in the microwave in a bowl sprayed with nonstick spray for 1 minute – so easy!

IMG_9831

Add TWO slices of Trader Joe’s LEAN turkey bacon.

IMG_9832

Plus a drizzle of my FAVORITE Maple Syrup ~ 100% PURE (and sometimes Organic) from Trader Joe’s.

IMG_9834IMG_9833

Add my other waffle top to make a perfect hat to this 4.5 point sandwich!

IMG_9835

Slice in half and DIG in!  It was interesting ~ I have to say this is the first time I’ve had my eggs sweet.  Sure I’ve dipped bacon or sausage in syrup, but, this was something new, something DELICIOUS!

IMG_9837

My breakfast ROCKED at keeping me full for hours ~ I really think it was all the protein and fiber.  I was not hungry before my run and I wasn’t starving after which usually happens if I skip my AM snack.  I eat breakfast and lunch about 5 hours apart.

The weather outside today was AMAZING ~ warm, sunny and totally spring like.  I LOVE the pink flowered Cherry Plum trees ~ they smell like Spring and I focused on them the entire time during my 4 mile run.  Oooy, my legs were so tired and I ran so slow, but, I DID it!

When I got back, I whipped up a quick and easy lunch.  I used my Eat Smart Pro Precision Scale to measure out everything you see in my sandwich below this morning.

IMG_9843

2 slices TJ’s Sour Dough (all out of my usual)

1 1/2 oz each of LEAN Honey Roasted Turkey & Ham

1 oz PepperJack Cheese

PICKLES

Made In Naple Spicy Apple Ginger Mustard

IMG_9844

Totally worth all 7 points!  For some crunch, I had a side of snap peas.

IMG_9841

Plus a pear for dessert all washed down with an Acai Tropical Sobe Vitamin Water.

IMG_9847

I LOVE the 1950’s plates we have at work so today I had to use one.  I couldn’t resist having real crunch, so I hit up my co-worker for some of those totally addicting Olive & Rosemary Triscuits (6 for 2 pts).

IMG_9848

When snack time rolled around I wasn’t super hungry, but, I wanted something sweet.  I grabbed a pack of Annie’s Organic Sunny Citrus Bunny Fruits for 1 point.  The perfect cure all for my sweet fix!

IMG_9850

I was a little hungry while cooking dinner, so I decided to snack on a 1 point Low-Fat Sargento Cheese to tied me over.  I LOVE cheese ~ it counts as a dairy serving and well honestly it’s good straight up or on top of things 😀

IMG_9852

Dinner was SIMPLE, yet AMAZING and earned me some serious brownie points!!!  I LOVE my grill and I cook on it year round even if it is raining outside.  I marinated a Tri Tip in Trader Joe’s Island Soyaki yesterday so it would be LOADED with flavor when I grilled it today.

I measured out 4 oz of Teriyaki Tri Tip (4 pts) – oz for oz it’s 1 point since it’s a LEAN cut!

IMG_9854

Plus 1/2 cup Healthier Potato Salad (2 pts)

IMG_9857

A BIG Ole Artichoke (0 pts)

IMG_9859

with artichoke jalapeño dip for dipping.  Do you think the artichoke noticed the cannibalistic action? :D  I really only ended up using it on the heart – so good! (1 pt per Tbsp)

IMG_9856

I have an AWESOME dessert planned for during The Bachelorette Tell All so if I have it, I WILL BE BACK with pictures 😀

OPEN SKY FUN!!!

The fantastic peeps at Open Sky have created a little game to give you all a little incentive to do some shopping (like anyone NEEDS that) 😀

Put the puzzle together below and click on the “CLICK HERE”, not the “OK” (doesn’t work) to get a SPECIAL OPEN SKY COUPON good for ANYTHING IN MY OPEN SKY SHOP!!!

TWO DAYS left to score my Eat Smart Pro Precision Scale at 15% off along with these other FANTASTIC Train Like An Olympian Items.  If you are not sure why you NEED this scale, be sure to check out my post for Why I LOVE My Food Scale!

That’s all :D  It’s like my birthday presents to you all.

QUESTION FOR YOU ALL

If you could receive one thing from me for each purchase from my Open Sky Shop (think simple as in a personalized recipe or a small gift) what would it be?  I am thinking of adding a fun thank you gift to each person who buys something.

G’Night all!

WOW!!!! First off Happy Anniversary that is so wonderful!

Second, your food looks phenomenal. I truly wish that I could just follow you around and have you teach me/make for me all of your meals.
    * your lunch = great deli sandwich ( I love TJ sourdough)
    * Dinner = scrumptious with that potato salad and artichoke hearts are one of my favorite vegetables.

I love the snap peas from trader Joe’s I just eat them so quickly it gets expensive so I have to switch up my vegetable weekly haha.

Whoo hoo! Happy blog birthday! Both of the sammies in this post look amazing! I would love to have a food scale for the sole purpose of measuring an ounce of cheese. I have no idea how much that portion is. Can’t wait to see your dessert! xoxo

I love your creative breakfast ideas…this one sounds yummy and kind of reminds me of the McDonald’s McGriddle–but way healthier!

Thanks for the tip about the adapter for my comptuer-I will have to try and get that considering I still can’t find my camera cord. Bah!!

I’m so excited for your half marathon! I’m thinking about signing up for the Santa Cruz half marathon on April 11. You interested?

Your eats looks delicious! A few quick questions…how do you cook your artichokes? I’ve never ventured in cooking an artichoke – it sounds a little daunting. And is the artichoke jalapeno dip homemade or did you buy it somewhere?

    Hi Jessica,

    Thanks!!!

Oh, I WISH I had made this artichoke jalepeno dip, but,it’s store bought. Maybe I should add creating a healthier version to my list of things to make 🙂

I think that is so true ~ after the first 10 minutes or so my body realizes I am not giving up and gives in.

    Hi Sarah,

It’s so great to see you around again ~ I’ve missed ya!

I had issues with my cord not reading so that was when I got one of those drives – they are awesome. I carry it in my purse so I NEVER can lose it 🙂

Hmmmm….Let me ponder the Santa Cruz Half – have you signed up already? You run way faster than me but I could always meet you at the finish line. My half is on March 14th so I could just keep it going 😀

    Hi Ann-Margaret,

    1. To Cook My Artichokes: I trim about 1/4 inch of the stem and top (so it can sit flat). Then, I place them upside down in a pan with 1/2 an inch of water. Cover and cook over medium high heat letting it steam for 35-45 minutes depending on the size of your artichoke. Remove and enjoy!

    2. I actually bought the Artichoke Jalepeno dip, but, I should consider trying to create a healthier version – it’s AMAZING!

    Thanks,

    Danica

That is possibly the tastiest looking breakfast sandwich I’ve ever seen! Just wanted to let you know I recommended your blog to my mom, who’s a big fan of Weight Watchers. She’s used a lot of pieces of the program to lose about sixty pounds since last June! Keep up the great work on the blog–you have so many fun food ideas 😉
