Hash A Go-Go

Happy Monday all!  Thanks for the welcome back all!  It feels good to be able to finally get back into my Simply Filling groove and to find the time to ramble on about my day.  I am very proud of staying the course today despite things being a little crazy and coming home, firing up the stove and whipping up  a simply filling dinner at 9 pm ~ determination!

I am still completely IN LOVE with Healthy Egg Rolls to start my day ~ 1 tortilla “fried” with low-fat cheese, a “fried egg”, sea salt, black pepper and a bunch of sriracha swirls.

4 points+ (SF + 1 WPA)

Instead of having my fruit with breakfast, I took it on the go and ended up having my banana as my mid-morning snackage (SF).

Instead of the usual Brown’s Valley Market deli sandwiches we have on Mondays, I opted for their Chef Salad.  This market is awesome and will make whatever you request.

In my mix ~ Mixed Greens, Tomatoes, Carrots, Red Cabbage, tomatoes, plus radishes (they come in their salad blend) ~ 1 oz. low-fat cheese, 1 oz. smoked turkey, 1 oz. ham, half an egg and homemade ranch served up on the side.

They seriously pack their containers full.  The only problem with having everything put on top….

is it ends up on the bottom when you dump it out.  That totally didn’t stop me ~ I ate it all…well, except the radishes. (SF + 4 WPA for the ranch) – 9 points+

Dessert ~ Celtic Sea Salted Caramel Red heart (SF + 1 WPA) – 1 points+

Late afternoon while sipping coffee, I snacked on a low-fat sargento cheese and a bunch of watermelon. (SF) – 2 points+

Despite not walking in the door until almost 8:30 PM, I set out to cook a quick Simply Filling Dinner ~ Hash A – Go – Go like the restaurant in Vegas!

How many of you knew “fried” peppers, onions & red potatoes in 2 tsp. Olive Oil is Simply Filling?

How about Homemade Simply Filling Turkey Apple Sausage ~ (pulled from the freezer ~ promise I wasn’t that ambitious at night ~ I was too hungry for that!)?

Crushed up ~ if my sausage looks green this time, it is because I used a cilantro pesto with this batch for an added kick.

“Fried” Potatoes with peppers, onions, & turkey apple sausage ~ 100% Simply Filling and 100% Delicious!

Topped with the red sauce post picture (Sriracha for me, Ketchup for him ~ I had to share).

I am not sure, but, I may have a bowl of fruit for dessert since I still feel like I want something else after writing my post.

The one thing I have to say is kinda impressive for me today is my step count on Flex!  The first week of the month is a little crazy for us so I do not usually get the chance to step away from my desk.  I must’ve ran back and forth a lot in my office today Open-mouthed smile

My 2 active minutes must’ve been when I had to run down stairs and back up ~ funny!

    Hey Danica!! Your hash looks tasty, I’m going to have to try that!! I’ve started eating tortillas and eggs for breakfast because of you. When you say “fried” tortilla, do you crisp it up with cooking spray? Your breakfast always looks so tasty do I wanted to replicate it!

      HI Allie,

      Yes, I “fry” my tortilla and my egg in nonstick spray. I cook them both at the same time. Here is the step by step I put together for my Healthy Egg Roll if that helps.

    I always have homemade tomato sauce on hand as well as pasta, I bulk it up with veggies.

    My goto meal is usually “go out to eat”, but I am really trying to change that 🙂 For us it’s probably a can of Amy’s lo-sodium Tomato Soap and grilled cheese made with Natural Ovens Double Fiber Bread and Publix low fat provolone.

    Danica,
    You say you ate “hand” in your lunch salad. Are you sure you didn’t mean ham? 🙂

    That dinner looks fantastic and EASY! Generally we make at least 1 meal in advance each week with 4-6 servings that sits in the fridge so it can be the “go to” meal on days when we are too tired to cook or life tries to get in the way. We never default to going out to eat or mindlessly chomping cookies/crackers etc as a result!

    Thank you for all your inspiration and details! I would love to know what kind of tortilla you use for breakfast. Also, I noticed you use low fat cheese and count it as SF- I thought it had to be fat free? Also, yesterday the pasta with no cook sauce recipe was white pasta, not whole grain. I’d love your thoughts.

      Hi Jessica,

      Here is a post I did for how I work the Simply Filling Technique. I choose to use low-fat cheese over fat free cheese as I feel it is more nutritious (not chemically made) and I can keep it in check.

      For the pasta, I do substitute whole grain in the recipe to make it simply filling whenever a recipe calls for white pasta.

    My go to meal is a can of Progresso light soup – 4 Pts, with a few crackers if I’m really starving. Cream of potato is my favorite.

    We make that hash a lot. It’s delicious and very filling.

    I made your tomato sauce recipe from the weekly menu plan last night. It was delish! I used tiny tomatoes from our garden…the hubby insists on growing them every year even though only my daughter likes plain tomatoes! Thanks for giving me a great recipe to help use them before they go bad.

      Hi Tammie,

      I use the Mission Extra Thin Yellow Corn Tortillas. They are 1 points+ each. I have bee able to find them at my local grocery store as well as Super Targets.

    If I walked in the door at 8:30 at night, my go-to meal probably would be take-out/fast food. I’m not as dedicated as you are, but I am impressed with your dedication. Your hash looks wonderful and so simple. Don’t know if my husband would like it, but I’m going to make it for my breakfast today.

    When I walk in the door at 8:30 and need a quick dinner, its usually eggs. 2 egg omelette, sometimes with veggies, sometimes without (when I’m super beat). Side of fruit and I’m good to go!
