Happy Friday all! How was your day? My day was super productive and actually kinda fun. While I woke up early, I decided to relax sipping coffee and watching the news over hopping in the treadmill. I thought I’d take a long lunch time walk in the sunshine but that never happened. Neither did my idea that I might do yoga instead lol.
After my I lazy morning, I made a delicious zero point 2 egg scramble with half a cara orange. I also had my usual cappuccino on my drive in (2 sp).We celebrated my coworkers work anniversary today at Cafe Bernardo (much better than walking, right!?)
I had a slice of this rosemary sea salt bread – it was so good, I could’ve eaten all of it (3 sp).We had ‘healthy fries’ on the side with this grilled asparagus – delicious!
I had the grilled salmon salad and loved it!
Romaine, endive, beets, watermelon radish, asparagus, egg, salmon, chives, lemon vinaigrette (4 sp).This is my 3rd trip this week to Temple coffee and I have to say it’s my new favorite thing. I’ve only had their Dharma Espresso Americano’s (0 points!) But today I also had a sea salted caramel which was perfectly balanced, soft & rich. (4 sp).
Working a bit late, I snacked on some cashews so I wouldn’t eat everything when I walked in the door (3 sp)
I am so proud of myself for finally cooking today! These Healthy Nachos totally hit the spot too.
I started with Homemade Sea Salted chips using Mission Extra Thin Yellow Corn Tortillas.2 Tortillas cut into 16 pieces sprayed with non-stick spray, sprinkled with sea salt and baked at 400 for 7 minutes.

Topped with turkey taco meat made with homemade seasoning & salsa…2% sharp cheddar cheesiness….
