Today’s lunch was so good and it only took about 10 minutes to make tops. I picked up these new to me Pasta Prima Butternut Squash Ravioli’s when I was at the store yesterday and I couldn’t wait to try them.
1 serving (5 BIG ravioli’s) is only 4 Weight Watcher Points – not bad!
I LOVE how they made the noodles striped. You know that was a HUGE selling point for me 😀
While the pasta cooked, I made up a quick veggie stir-fry to mix with the ravioli’s.
1 summer squash, sliced
1 orange bell pepper, sliced
1/4 sliced sweet onion
a handful of sliced mushrooms
1 garlic clove
4 tsp Extra Virgin Olive Oil
Sea Salt & Freshly Ground Black Pepper
Plus a pinch of crushed red pepper
When the ravioli’s were done, I added them to the veggie pan and topped them with a sprinkle of the parmesan herb mix that came with the ravioli’s.
Veggi-ness ~ garlicky, herby, peppery – good!
And 5 BIG butternut squash ravioli’s that i savored. I really enjoyed the ravioli’s – the sage flavor is definitely prominent in them, but, you get sweetness from the butternut squash with hints of cheese from the four cheeses. I’d definitely buy them again.
Dessert was a side of fresh watermelon.
We are off to the movies this afternoon. It’s a toss up between The Ugly Truth and Julie/Julia ~ The Husband is letting me pick – Wow, I can’t decide. I am thinking that whatever is playing first when we are all done shopping and such is what we will see.
