Happy Sunday all! How was your weekend? Our weekend was so good and I loved getting out in our 80 degrees sunshine both days. Saturday we were responsible getting all our todo’s done so we could have fun today.
Before heading out of town this morning, I made us zero point scrambled eggs.I also snacked on some of this watermelon as I cut it up for the week.
My only other prep this week aside from meal planning and shopping was Instant Pot Hard Boiled Eggs for zero point snacks.
We grabbed Starbucks for our drive. Tall Nonfat cappuccino with caramel on the foam only. (2 sp).
After dropping The Husband off, I had lunch at my favorite Thai place.
Starter salad with peanut dressing (2 sp).Plus 2 fresh vegan spring rolls (4 sp).
Today I ate everything on my plate (normally I’d skip the rice). This Thai Basil chicken has the perfect balance of sweet, salty, spicy and I wanted all that saucy rice. (10 sp).
After lunch and a bit more driving, I hiked for the next 2 hours.
It was so beautiful outside even if it got a bit hot towards the top.
Post hike, I stopped at the gym to swim a few laps then enjoyed sitting in the sunshine reading my new cookbook.
There are so many good recipes in here that I cannot wait to make.On our way back into town, we stopped at Buckhorn Grill.
I had half a Yik Yak Salad with Chicken and this time also ate the 1/2 tortilla. (8 sp).?26 Daily WWFreestyle Smartpoints, 24K steps
