How do you top your “taters”?

Happy Tuesday all!  This morning I kept my promise to get up early and hop on the treadmill for my 30 minute Jog/Walk.  All my tiredness completely went away by the time I stepped off the treadmill ~ sometimes I think it “might” work better than coffee.

Breakfast originally started out as breakfast burritos, but, as I cooked it, I decided it looked too good to be stuffed inside a tortilla.

I made a 5 minute Egg White Scramble with Veggies and “bacon”

Start off by sautéing the following in nonstick cooking spray over medium heat for 3-4 minutes

  • 1/4 sweet onion
  • 1/4 cup sweet peppers
  • 1 cup mushrooms, sliced
  • 3 pieces lean Canadian Bacon

Reduce heat to medium low and add 1/2 cup egg whites.  Remove from heat and stir in 1/4 cup cherry tomatoes and 1 Tbsp fresh basil.

100% Simply Filling and only 3 points+ if you are counting.

Late morning I was craving my watermelon (I think for hydration!).  I paired it with a light string cheese for snack (SF) – 1 points+

Ever since we had our BBQ Cheddar Turkey Burgers while camping, I have been craving them.  It’s a good thing I still had some left in the freezer to have for lunch.

Yup, I am totally that girl who isn’t afraid to turn her grill on at 6 am just to make up a burger for lunch Open-mouthed smile

I did steal toppings from our café sandwich bar because I wanted “more” with my burger.

Served up with ketchup and mustard on a thin bun (SF) – 8 points+

I had some veggie tray veggies on the side as my “chips” with 2 Tbsp Light Ranch SF + 2 WPA for the ranch. (2 points+)

I actually wasn’t really hungry for an afternoon snack, but, did eat my banana on the drive home since I knew I would not be eating dinner until later.

Every single time I make Sweet Potato BLTA Nachos, I always wonder why I do not make them more often.  They are so easy to make and seem totally indulgent, but, they are healthy!

This recipe is 100% Simply Filling if you use Canadian Bacon or you can be like me and use 2 WPA for 2 pieces of Trader Joe’s Peppered Turkey Bacon .

I cooked up my sweet potato “chips” with nonstick spray, sea salt and pepper in the oven at 425 for 20 minutes.  Then, topped them with 1 oz 2% Sharp Cheddar and my 2 slices of BACON!

Pop the plate in the oven for 1 minute to get the cheese all melty….

Topped with sweet cherry tomatoes and green onions then, spiced up with a few jalapenos, hot sauce and 0% Greek Yogurt. (SF+2 WPA) – 7 points+

Ridiculously good!  Sweet, salty, smoky, bacon-y, crunchy, spicy – melt in your mouth good!

STATS (12 am – 10 pm)

  • 2,721 calories burned
  • 11,093 steps taken
  • 4 WPA used, 24 WPA remaining (21 daily points+)

I absolutely have LOVE sweet potatoes and am always looking for new ways to try them.  I love them as fries, nachos, in soups and chili.i

    YUM! Those nachos look delicious! Do you have a secret for cutting sweet potatoes? They’re so tough to cut! I always want to make sweet potato fries and other things, but I can never seem to figure out how to cut them!

      HI Anna,

      I find peeling the sweet potatoes first and have a really sharp, large knife makes a big difference in cutting sweet potatoes.

    Do you use one whole (small) sweet potato? This recipe looks wonderful!

      HI Sheila

      It depends as I usually go by the sweet potatoes uncooked weight of 5-6 oz. If I am lucky enough to find a small to medium size, then, I use that. Otherwise, I have made up a large sweet potato then had half for dinner and the other half for lunch the next day.
