Do you all remember my “lofty” goals that I set out to achieve this weekend? I actually did pretty good at meeting “almost” all of them. I conquered our trip to the winery with wine tasting, tried a delicious new place I can’t wait to tell you all about, completed like 80% of my Christmas Shopping.baked a million things and am in the process of finishing up our Christmas Cards….So much to do, so little time. I have a feeling this week is going to be busy, but, in such a fun way.
Are you all ready to see everything I baked? Don’t say I didn’t warn you ~ there is a whole lotta deliciousness in this post. If you see anything you want a recipe for, just let me know.
I started off making 12 batches of Chex Mix ~ my favorite baked thing to give away ~ salty, crunchy, nutty, good!
Caramel Pecan Quaker Oat Squares ~ It’s a fun way to get people to eat their grains
32 Coconut Pound Cake muffins!
Built in portion control for only 6 points+ each and they freeze well too!
The new recipe I tried this year is honestly too good….as in I am so glad we are giving away all but like 4 cookies. The Husband gets sad if I bake and do not leave him a baggie or two lol.
White Chocolate + Salty Roasted Macadamia Nuts + Coconut….Need I say more?! Their consistency is like a macaroon and they are totally decadent.
My Mom’s M&M cookies that remind me of cooking with her every single time I make them.
The Husband’s favorite cookie ~ Chocolate Chip Walnut Cookies!
Pecan Bark ~ It doesn’t look as good as it does here, but, it’s just as AMAZING!
I pondered making this Butter Toffee with Chocolate & Sea Salted Almonds too, but, thought that might be too much.
All packaged up in these super cute Penguin baggies to keep everything fresh.
After the winery and wine tasting on Saturday, we stopped at probably one of the best BBQ places we have ever been called The BBQ Spot in Santa Rosa, Ca.
The secret is totally in their sauce ~ Original & Spicy. I am pretty sure I could eat just the sauce it was that good.
We ordered “family style” and shared so we could try a little bit of everything.
Smoked Brisket that was so tender your fork cut it…..Hot Links (The Husband’s choice), Fries and Baked Beans that had big chunks of pulled pork in them.
Baby Back Ribs that were smoky, salty, sweet, and fell right off the bone. The BBQ Chicken was even better as it was tender, juicy and you could taste the smoke all the way to the bone.
I might have licked the plate if nobody was around ~ it was that good.
Cheesy Garlic Bread…..
BBQ-Licious!
I am not yet sure what is on the menu this week, but, I know everything is going to be 30 minute or less meals. I am going to work on catching up with your emails, comments, etc. this week.
For now, I am off to fill out some more Christmas Cards….
QUESTION OF THE DAY:
Are you baking this holiday season? If so, what are you making?
Night all!
All I can say is: OMG!! I’m drooling all over my key board 🙂 I usually don’t bake/make anything for Christmas, but this year I’m i spired so I will be making a Holiday Spiced Snack mix from a 12/2005 Betty Crocker little cookbook (uses corn Chex), Holiday Pretzel Treats (recipe found in Family Fun Magazine back in 2002, but I’ve seen it all over the internet recently), Soft Frosted Sugar Cookies, and Crackle Spice Drops (from WW web-site)! Looking forward to seeing what others are making for more ideas!
All my holiday baking is done. Grandmaman’s Main a la melasse (Molasses Cookies), Lemon Honey Cookies, Weight-Watchers-fied Nanaimo Bars, and old fashioned cake doughnuts (for Dad). My Sister is making the Maple Fudge this year.
I love your baked goods! And OMG, the BBQ looks so amazing! I will have to go next time I am wine tasting 🙂
This year we are baking cookies for everyone! I just went through our recipes last night; this is going to be a BIG project 🙂
We are making Coconut Macaroons (yum!!) and Shortbread 3 Ways: Traditional, Chai Spiced and Toasted Pecan.
I have figured out the WW points+ yet but I do intend on only keeping a few. Wish me luck!
Would love the recipe for the Caramel Pecan Quaker Oat Squares! Thank you!

I bake alot of mini zucchini bread loaves to give as gifts. Am also doing lemon brownies and a family recipe from my grandmother we call Christmas Caramels. Nothing really WW friendly but with small pieces I make it all work.
Ohhhh my goodness…and where, may I ask, do I find the recipes to your delicious looking baking??? I would give all the chocolate chip/walnut ones away. I am that odd one that doesn’t like chocolate 🙂
If I ever get moved into my own place I will be digging out my recipe boxes/books and baking my Gram’s cherry loaf.
Your “macaroons”, Caramel Pecan Quaker Oat Squares, and Chex Mix look absolutely scrumptious 🙂
