I almost made it ALL morning without a snack, but, my stomach started to rumble shortly before spin class. I know it’s a big jump to eat breakfast at 7:30 AM and not eat until after spin class close to 1:30 PM. I had a small stack of Trader Joe’s Lightly Roasted Cashews before heading to class.
When I came back I was definitely ready for lunch. I am trying to start off with eating my veggies first to fill me up so I have less room for things that are more calorie dense. I started out nibbling on some baby carrots (oh how I wish I had THAT Roasted Red Pepper Hummus for dipping here).
Then, I moved onto the cherry tomatoes I got at the market yesterday.
I LOVE plates of color and crunch!
Then, sticking to my BLT promise for the week, I scooped up a small portion of the Pasta Salad that was being served up in the break room. I am not a big fan of mayo salads but this was a momentary weakness and I had the desire to try something new. I am sure I went spinning just to eat this LOL…..It was pretty tasty though – LOVED the peas and red peppers in it.
My main dish was leftover Grilled Eggplant Lasagna. I think this really does get better the longer it sits as the flavors meld together. I LOVE the cheesiness of it all.
Surprisingly I STILL wanted dessert after. I had thought of fruit but honestly felt like I had enough fiber going on with all the veggies I had already. I decided something crunchy and sweet would be perfect so I pulled out a 1 oz bag of Annie’s Honey Bunny Grahams. You get ALOT of that bag for 2 Weight Watcher points.
I am pretty much over the top full now so I am pretty sure I will not be needing my afternoon snack.
Only a few more hours until my foot pampering pedicure session – I cannot wait!

Those tomatos are so pretty and colorful! That eggplant looks great as well:)

that pasta salad looks good, it would be nice to make one with yogurt and throw in the peas and red peppers. yum to the eggplant lovin!
