Hi all! How was your weekend? Our weekend was pretty good and I am proud to say I am back on my losing streak (ok, it’s just one week but I intend to make it more!) And I am down 1 lb.
Today I got back in my groove with a great hike, a bit of meal prep and one delicious on point day.
Zero point breakfast goodness – 2 egg scramble plus berries.I am feeling super proud of my tomato growing abilities – My weekend harvest.
Even though I headed out early, it still got very hot (@ 97 degrees) by the end of my Tower hike. I did spend some quality time at the top in the shade relaxing and taking in the view before heading downhill.
Despite being totally hungry after 2 hours of hiking, I kept myself in check with lunch at Washine.?
Sesame starter salad (1 sp).Egg flower soup (2 sp) – is it weird that even on a hot day this soup is still good?
The massive lunch plate – Wow! Here is what I had and what I took with me.
Cream cheese won ton (so good) – 2 sp
Veggie Eggroll – 4 sp
1/2 the Kung Pao Chicken (4 sp)
Plus my fortune cookie (1 sp)
The rest I took home for lunch tomorrow – major success as my mouth told me to keep eating but I didn’t listen as I was satisfied. My mini afternoon meal prep included Zero Point Instant Pot Hard Boiled Eggs.
Plus watermelon. This was my late afternoon snack too.
The Husband requested these Best Ever Steak Sandwiches for dinner. You get 1/4 of the recipe for 8 Smartpoints and it’s so worth it.
