Hi all ~ I hope you had a fantastic Tuesday ~ my day was awesome. I have been tackling my todo list each day at lunch and today I finally renewed my passport with my new last name. Ok, so it only took 8 months, but, I sent it off – woohoo! Now, we just need to find the next location to go since I need to get some stamps in it! I am thinking warm, tropical…maybe Belize or something. Any ideas??? 😀
This morning I woke up craving oatmeal, so I made up a big bowl of spring oats.
1/2 c Quaker Old Fashioned Oatmeal
1 c water
1 Tbsp Ground Flax Seed
1 nectarine, chopped
Small handful of blueberries
I added the nectarine after I cooked everything in the microwave so it stayed crunchy. But, oatmeal just needs toppers. So I added a big scoop of Low Sugar Organic Apricot Preserves and 1 Tbsp of Freshly Ground Almond Butter.
My oats held me over for about 3 hours and I had a few Salt & Pepper Somersaults for snack. I liked this flavor ~ they taste like spicy and crunchy sunflower seeds. I still think the Chez Chocolate is my favorite flavor out of them all.
I was really undecided today for lunch. I had packed up two options ~ a Don Lee Farms VEGAN burger with all the fixings and Trader Joe’s Black Bean & Corn Enchiladas. The enchiladas won…..
I do not typically buy any frozen meals except Amy’s (LOVE them!) and a few Trader Joe’s meals. I had to check this out because the nutrionals are sensational and the ingredient listing is pretty clean. I wish they chose other wording for the soy (coagulated makes it sound so nasty!)
This might just be the prettiest post micro waved meal I have ever had. I liked the enchiladas ~ they were surprisingly creamy and rich tasting. I’d buy them again.
For my sides I had some crunchy snap peas and a bunch of grapes.
Keeping with my indecisive self all day, I had a few options for my afternoon snack. I had some TJ’s blueberry greek yogurt with blueberries and some Annie’s Bunny Honey Grahams.
After work The Husband and I decided to have an impromptu date night. I LOVE date nights in the middle of the week especially when you have no idea they are happening. He knows I’ve been wanting to see The Proposal since before it came out and finally caved tonight 😀
We stopped for some lottery scratcher’s and a quick sandwich before heading off to see The Proposal. I stepped out of my norm and shared a meatball sandwich with The Husband. I have to admit that although it doesn’t look too tasty, it was surprisingly good.
It was pretty cool that we only had to share the movie theatre with like 3 other people. They were handing out $1 popcorns and free sodas tonight but we didn’t have any since we just ate dinner.
I have to say I absolutely LOVED The Proposal and The Husband did too. I think we both were cracking up pretty much the whole way through. I totally want to live in that house in Alaska – how awesome would that be (other than the coldness & strange daylight hours). It is definitely one of those feel good movies but I can totally seeing myself buying it and watching it when I want to be all sappy 🙂
This week has been pretty crazy busy week so I’ve had to do all in one recap posts for the day. I am hoping by the end of the week I can get back to my regularly scheduled daily routine 🙂
What do you all think is better ~ the all in one recap for my day or 2-3 posts a day? I would love your feedback but I think 2-3 is more fun since I can share more 🙂

I have some butternut squash enchiladas in the freezer that I need to get around to tasting.
I was not sure Hubby would want to see the Proposal but since yours liked it maybe mine will to?

I think I”m the only lady that hasn’t seen The Proposal yet. I guess I’ll have to wait until it comes out on dvd, sadness. 🙁
I think whatever you have time for posting wise is great, if you have time to post 2-3 times a day go for it!
I was so bummed when I renewed my passport after I got married and realized that I would no longer have the stamp from our honeymoon to the Bahamas! I guess I will just have to convince hubby to take me back for our 5 year anniversary (in 3 years!!).
The proposal is amazing! Loved it too!

As you know, my sis is getting married at the end of August. She has decided 100% yet if she’s going to take her fiance’s name.
Why wouldn’t she?
Because she zillions of stamps and visas in her passport — she and her fiance have been all over! She’s so bummed to void her passport!!
It’s been a running joke for the last few weeks!! LOL

I think you should post however is convenient for you. For me, one post a day is easier, but it’s different for everyone. 🙂

Love the pretty oats! They look so yummy. That TJ’s frozel meal looks really, really good. Wow! I’ve never seen a frozen meal look that nice before.

I like a mix of both combined posts, and several a day. To me, it depends what you have to say. If there’s a lot, it may be better to split it up. I know.. not much help either 😉

I love those enchiladas! And the chocolate somersaults. Haven’t tried any other flavors yet, though. Hmmm I like reading 2-3 posts per day, but definitely can’t catch up on them all throughout the day! I’d probably end up reading them all at one time ayways 😉 But whatever YOU want to do works out best!!
I LOVE THOSE ENCHILADAS! how do you heat yours up? i don’t really do the medium heat up- i just end up heating on high at random time intervals- although it gets the toritlla crispy, kinda like chips! i like to have broccoli on the side to soak up that mole sauce!
I just heated them according to the packaged directions. I think it was like 5 minutes on high and let them stand for a minute. They were delish. I like your idea of making the tortillas crispy though and the broccoli with mole – YUM!
