I should’ve stayed in bed….

Today was totally one of “THOSE” days where you know you might just be better off if you just stay under the covers and don’t leave the house.

Last night, I remembered to set the alarm, but, I forgot one sort of important detail ~ to actually turn the alarm ON!  I woke up luckily at (5:50 am) in a panic since The Husband had to go in today by 6 am.  I felt so bad telling him you have to get up and go now.  I rushed around getting him out the door then, the rest of my morning went like this:

* Quickly throw everything in the crock pot to make the planned Irish feast #1 Guinness Beer Pot Pie.  Try not to get sick cutting up raw meat that early in the morning (so repulsive).

* Stuff the crockpot to the bring with everything, but, put a cookie sheet under it in case it “overflows”

* Throw random food in a bag to take for lunch (notice anything missing here)

* Fill up SIGG water bottle, knock it over while grabbing the lid, fill it again!

* Get ready and out the door to rush to Starbuck’s because The Husband asked if I could bring him one (guilt told me I had to since I didn’t exactly wake him up on time)

Wait forever and a day at Starbuck’s (because it always takes forever when you are in a hurry :))  Realize AFTER I order and stood there impatiently that I FORGOT to pack breakfast when I packed lunch *sigh*  Hop back in line and have them think about helping the obviously cranky girl 🙁

Get paid back for begin grumpy while driving in and my latte spills all over my car ~ frickin’ frackin’!!!

I finally managed to make it into work late, gobbled down my breakfast then realized I FORGOT to take a flippin’ picture ~ AHHHH – it’s not even 8 am at this point.  Luckily I’ve had the same breakfast before (other than my grande latte was HOT).  Starbuck’s perfect oatmeal with the berry blend and brown sugar (no nuts) (9.5 pts and I don’t even care that my breakfast is high in points at this point.)

As I opened my email, my reminder pops up to tell me have a doctor’s appointment today AFTER I had already told my friend I’d go to lunch with her yesterday…call to cancel and reschedule for tomorrow. *sigh*

Luckily, I managed to be pretty normal with the rest of my morning although I was so not feeling the fact that I had to train people all morning and have my coworkers ALL ask me about my run, why I am limping and then, have my boss tell me I am crazy for running when I have a perfectly good car to drive LOL.

Lunch was the only thing leftover we had in the fridge ~ 2 slices of Veggie Pizza.  Why is pizza so good the next day ~ probably because of the CHEESE in the crust!!!

On my way to the doctor’s, The Husband calls me to let me know the crockpot is overflowing EVERYWHERE ~ really?! Ugh….Luckily he fixes it so I don’t have to come home to deal with that too.

After my doctor’s appointment, I pretty much decided at this point that FROYO would make my day BETTER.  I got a little crazy packing my small cup  because sometimes, you just NEED to go crazy and have FROYO for dinner.  My cup was packed with strawberry, the Mystery Flavor (Blueberry) and vanilla with sprinkles and mini yogurt chips.

When I got home, I took a little nap and then finished dinner.  I pulled out the Pepperidge Farm Puff Pastry Sheets that I received from FoodBuzz as part of the Tastemaker program awhile back.  I was not sure how I was going to use them, but, this Guinness Beer Pot Pie sounded like the perfect thing.

I should’ve checked the ingredient list before I said I’d use them because they contain High Fructose Corn Syrup :(

I wasn’t hungry at all since I had froyo for dinner 😀 and I made this dish for The Husband.  I had two bites of his dish and realized I LOVE puff pastry :D, but, I didn’t really like this dish.  It’s super gravy like and bland even after I added extra spices and seasoning ~ we ended up tossing it….such a bummer.

I think I’ve come to the conclusion that Saveur magazine does not match my cooking style.  I’ve tried two recipes now from them…the first you never saw (Cheesy Chicken Plantain Enchiladas) and both were complete FAILS.  They look and sound good, but, the result is not so good to me.

Tomorrow the Corned Beef goes into the crockpot and now I am a little nervous that my “cooker” (as in me) may be broke.  I NEED to make some delicious food again that we actually keep to redeem myself 🙂

I am off to indulge in some Biggest Loser!!! Tomorrow is going to be a BETTER day!

    I need to quote my dear BF when a meal doesn’t work out, “sometimes you gotta take a loss” haha 🙂

    Oh man…those kinda days are rough. I had a crummy day too…maybe I should have gotten some frozen yogurt. Is that what FROYO means?? I kept thinking it was a specific brand!

    I thought Mondays were supposed to be the “I don’t want to get out of bed days”…

    Everyone has a bad day every now and then but the best part about it is you handled yourself so so well. Life will give you lemon days but sounds like you made lemonade and it turned out just ok. Better days will come your way this week – everyone needs to adjust to spring forward and you will be smiling tomorrow as it’s St. Patricks.

    Sorry yesterday was such a rough one. 🙁 Days like that come and all we can do is push on through. Although I bet topping of the night with a recipe not turning out as hoped was a huge downer. At least you weren’t too hungry thanks to the delish froyo. I agree, sometimes froyo/icecream is just NEEDED!

    ah, i hate having day like that. at least it ended on a good note with the fro yo! i know that used to save me when i lived in San diego! fro yo everywhere!!1

    I HATE those days! 🙁 Yesterday went that same way for me yesterday…couldn’t place my NEIGHBOR in the coffee shop and asked him which HOCKEY team he played on at the rink. Co-worker annoying the @*#&( out of me! Played a horrible hockey game (and lost). Went to bed late (because of hockey) and slept horribly. But today is better…phew.

    I’m excited to catch up on BL tonight! 🙂

    oh my gosh, amazing looking eats today ..
    for fast food oatmeal that looks REALLY good

    Wow talk about your no good ver bad horrible rotten day…I used to love that book until I grew up and more than id like that book became some of my days…the nice thing is you can choose to start your day over at any time (smile)

    I have not had a bad day like that for a long, long time. Tomorrow just has to be better!

    I have really good luck with Cooking Light recipes. Sometimes they need a little more in the spice department but they are usually pretty reliable.

    Hi Jenn,

    You are too cute! Froyo is just short for frozen yogurt…..I am not sure there is any brand that has that name, but, they would totally be smart to take it 🙂

    I just ate the Guiness pot pie…..it was really good! It was “gravy-ish” (not a bad thing!) but the taste was good and I liked it! All the dishes I’ve tried that you make are yummy! You are a good cook missy 🙂
