Improvise!

Happy Biggest Loser Day all!  I forgot to say thanks yesterday for sharing all your thoughts on a Wii vs an XBox 360.  You would think that they would all just let you play DVD’s since the games are DVD shape LOL.  I told The Husband, we just need to go test them out and be the Big Kids playing all the games to see which one like best.  I think he liked the idea of moving his Play Station into the bedroom.

Tonight’s post is going to be FAST…..I am tired so let’s see if I can do a less is more post.

My 5 AM Pre-Workout Snack ~ hard boiled egg and watermelon (2 points+)

After walking, talking the train and walking to work, I hopped on the treadmill for a  C25K workout.  I was originally going to do This Calorie Blasting Walk, but, the incline wasn’t working.

Post workout I was STARVING and couldn’t wait to dig into my snack.

1 cup TJ’s 0% Greek Yogurt (do you all know they make this in HUGE 4 cup container now for only $4.99 ~ deal!)

2 tsp. TJ’s Lemon Curd

Weight Watchers CinnaPop Chips on the side

You would think all that protein and fiber would fill me up for 7 points+.

But, today I was STARVING!  Luckily someone brought in veggie trays for all of us so I quickly grabbed a bunch of veggies with a little ranch to tide me over until lunch (2 points+)

I was thinking I WISH I knew what made me starving some days and not on others as I snacked on 7 Jalapeno Almonds (1 points+).

I almost pondered trading in my salad for a sandwich or something hearty for lunch, but, I stuck with it to get in my 5+ a day.

Lunch was another delicious 6 points+ Chef’s Salad (using up what we have in the house.)

* 2 cups Organic Romaine + 1 cup Organic Mixed Greens

* VEGGIE CRUNCH = Organic snap peas, carrots, yellow bell pepper, cherry tomatoes

* 1 ounce each lean Brown Sugar Ham and Honey Turkey (2 points+)

* 1 slice Jarlsberg Lite Swiss Cheese (1 points+)

* NUTTY CRUNCH = 1 1/2 Tbsp Chickpeas, 1 Tbsp Sunflower Seeds, 1 Tsp Ranch Sliced Almonds (1 points+)

* 2 Tbsp’s Newman’s Light Lime Vinaigrette (2 points+)

I was originally planning on having ones of these cute little Brie Cheeses I found at Trader Joe’s on top of some Kavli Crisps.

Especially because they are only 2 points+ for a cream cheese sized container.

But….this is where I had my first “ick” moment.  I know that CHEESE is mold, but, like to see that on the ingredients along with Penicillium and Animal Rennet (whatever that is) just made me not really want it anymore….

I realized it all came from the outside part on the Brie Bites.

I am kinda weird..I LOVE brie but I don’t love the funky outside (it reminds me of stinky cheeses and I don’t not like stinky cheese at all).

As I was pondering what to do my co-worker dropped off a package of Biscoff’s she found!!!!  She said she saw them and thought of me so she had to get them.

I instantly traded in the cheese/cracker idea for Biscoff ~ you all know I have an unnatural obsession with their spread and cookies.

We planned on having leftover Meatballs on top of spaghetti for dinner, but, there was just one problem.  We did not have any spaghetti noodles.

As I was pondering what to do and chatting with Zesty Cook about my Danica’s Daily Makeover!, he told me to improvise by taking my Lasagna Noodles and using scissors to chop them up half way through cooking.

I have to say, he is pretty smart because this totally made eating pasta fun and it made my mouth happy with big, thick pasta pieces!

    Just in case you were wondering…

    Rennet ( /?r?n?t/) is a complex of enzymes produced in any mammalian stomach to digest the mother’s milk, and is often used in the production of cheese. Rennet contains many enzymes, including a proteolytic enzyme (protease) that coagulates the milk, causing it to separate into solids (curds) and liquid (whey). The active enzyme in rennet is called chymosin or rennin (EC 3.4.23.4) but there are also other important enzymes in it, e.g., pepsin and lipase. There are non-animal sources for rennet that are suitable for vegetarian consumption.

    I hate days where you are just starving all the time but you don’t really know why!! Been having them a lot lately so I feel for you. =/ Good job keeping it healthy though!

    Tried the brie and loved it. We had it this morning on a Thomas whole wheat bagel thin and an egg (made egg like an omelette. heated brie bite on 5 second bursts in microwave 5 times to soften up a bit. Then, break brie bite into 4 equal pieces, fold omlette around brie bite until cheese softened. Place between the toasted bagel and have a breakfast sandwich = 7+ points). It was very good.

    I don’t like cold brie very much, as I’m not a huge fan of the casing, but melted, it was really good.
