Instant Pot Hamburger Soup Recipe

March 19, 2019 by DanicasDaily 1 Comment

I totally have to give props to my sister for this Instant Pot Hamburger Soup Recipe idea. She sent me a meat & potatoes version of a Hamburger Soup recipe that I knew I had to put my healthy spin on it. I actually ended up not really following the recipe but I braved experimenting making this on my own in my Instant Pot using tons of fresh veggies, herbs, lean meat and it turned out amazing.

This soup is so good – it’s thick, hearty, chunky and packed with this rich, herby tomato flavor like a much richer minestrone.

I love that you put everything in the pot, set it and wait 25 minutes.

Now if only it had a better name – Enjoy!

INSTANT POT HAMBURGER SOUP (Print It!)

INGREDIENTS:

  • 1 Tbsp olive oil
  • 1 lb 93% lean ground beef
  • 1 onion, diced
  • 4 garlic cloves, minced
  • 2 celery stalks, diced
  • 2 carrots, peeled & diced
  • 1/2 bell pepper, diced
  • 1 Tbsp golden brown sugar
  • 14 oz Mild Rotel diced tomatoes with green chillies
  • 1 1/2 cups tomato sauce
  • 4 cups beef broth
  • 2 tsp dried oregano
  • 1 Tbsp Italian seasoning
  • 1 tsp crushed red pepper flakes
  • 2 cups dry macaroni
  • 1/2 cup fresh parsley, chopped, optional

INSTRUCTIONS:

  1. Turn Instant Pot to saute. When ‘hot’ add olive oil, ground beef and onion cooking until almost browned, about 8 minutes. Hit cancel.
  2. Add remaining ingredients enduring the noodles are covered. Sealed Instant Pot and turn to pressure cook on high for 4 minutes. It will take about 20 minutes to pressurize before counting down those 4 minutes. Quick release, stir and serve.

STEP – BY – STEP:

After sauteing the beef and onion, add all ingredients ensuring the noodles are covered. It’s totally optional to add a bay leaf or thyme stem. I usually do this with soups but only if I have them on hand. Just remove before serving.Pressure cook on high for 4 minutes, quick release and serve. Tadah – totally easy, right?!I served ours up with a sprinkle of fresh parsley for color and parmesan for a cheesy, salty bite.Night all!
