Hi all! How was your weekend? Our weekend was the perfect balance of getting things done, having fun and relaxing despite the rain. This morning we braved heading out in the “drizzle” to walk the Alameda Antique Faire.
On the drive in, I had a tall nonfat cappuccino (2 sp) and we split this bacon, egg, salsa breakfast burrito at the fair (4 sp).Post fair, we had lunch at Jersey Mike’s. I had a mini #7 Turkey and Cheese Mike’s way plus pepperoncini and jalapenos. (8 sp). Plus a few of his Miss Vickie’s chips (3 sp).I spent this afternoon doing a little shopping and meal prep. I made Instant Pot hard boiled eggs and this Butternut squash ravioli with bacon, walnuts, mushrooms and English peas for lunches this week.For dinner, I made a healthy version of a Hamburger Soup recipe that my sister sent me. I actually ended up not really following the recipe but I braved my Instant Pot again and it turned out amazing.
Now if only it had a better name 🙂

looking forward to hamburger soup and the butternut squash ravioli dish. Both seem easy and I just purchased an Instant Pot. Thank you for your blog – have loved it for years.
