Hi all! How was the first day of 2019? I had a super productive day putting away our holiday decorations, straightening the house and going through our kitchen (out with the old, in with the new!) I also had a pretty awesome WWFreestyle day staying in my daily points tracking everything including our delicious lunch at Chipotle.
I braved cooking more than water in my new Instant Pot but more on that in a few.
ForFbreakfast, I cooked up the rest of our roasted garlic mozzarella chicken sausages with bell pepper, onion and eggs for breakfast (4 sp).Cleaning motivation – tall nonfat cappuccino with caramel drizzle on top only (2 sp).My super amazing, totally delicious Chipotle salad….it makes it even better that we were able to use our giftcard.Here is what’s in my 5 point:
- Lettuce – 0 sp
- Fajita veggies – 0 sp
- Chicken – 3 sp
- Fresh tomato salsa – 0 sp
- Corn salsa – 0 sp
- 1/2 serving cheese – 2 sp
I had a bit of cheesy envy watching him string his quesadilla so I am counting 4 Smartpoints for my taste.
I cooked 6 hard boiled eggs in my Instant Pot today and it was actually easy. Eggs plus 1 cup water…pressure cook on high for 5 minutes, quick release and cool in ice water.
I have not tried them so I’ll have to report back on if they turned out.I made this Instant Pot Sesame Chicken recipe for dinner tonight.
In my head, I thought that it would cook so fast and be quicker than on the stove. In reality, I am not sure it was faster but it was fun to make and nice to not have to watch the pan the entire time.
The chicken was super tender thanks to pressure cooking and corn starch.It definitely helps to prepare everything before you start cooking as the recipe goes together quickly.
2 changes I made, toasting my sesame seeds and reducing the sesame oil to 2 Tablespoons.Saute X’s 2 for 10 minutes total.Add the secret sauce, close and pressure cook for 3 minutes. Quick release.The verdict – we both loved it – in fact The Husband had two bowls! I think I’d reduce the sauce or maybe add more corn starch as it was a bit thin and there is a lot of it.
Served up with steamed green beans and 1/2 cup Tra Joe’s 3 minute organic brown rice (6 sp for my bowl).21 Daily WWFreestyle Smartpoints, 10K steps

Hard-boiled eggs are one of the best things I’ve discovered with my instant pot. I set it manually for 6 minutes, then let pressure release for 6 minutes, then release and put in ice bath for 7 minutes. The shell will peel right off, even if stored in fridge for several days). I do 6-8 at a time. So handy to have for salads, egg salad, tuna salad, etc.or to eat as a snack.

I love all the ideas – I had only been thinking of eggs for a snack, but, now I must make egg salad, chef salad.
