Happy Friday Eve all! This morning started out with my newest addiction ~ Healthy “Pigs in a Blanket”. This breakfast will take you 5-10 minutes tops to make and it is completely satisfying in every way….from the doughy, Kodiak Flap Jacks to the sweet and salty maple chicken apple sausage.
Here is all you have to do to make up your own Healthy “Pigs in a Blanket”.
Print out this $1 off coupon for Kodiak Cakes and head out to your local Target to buy a box.
Whip up 6 Flap Jacks (it’s what I have to call them because The Husband won’t eat pancakes, but, he will eat Flap Jacks ~ g0 figure!) 2 cups of mix = 6 flapjacks (1/3 cup of mix each), 2 points+ each.
While your flap jacks cook, take 3 Trader Joe’s Sweet Maple Chicken Apple Sausages and cut them in half. Then, “fry” them in nonstick spray on each side until golden and slightly caramelized. Each link is only 3 points+.
Cut the sausage halves in half and roll each half with 1 flap jack. Drizzle with pure maple syrup.
Dig in and enjoy TWO healthy “Pigs in a Blanket” for 8 points+.
Just a side note ~ they are so good I’ve been eating them all week long
I had every intention of eating my Spicy Kung Pao Chicken & Veggie Stir Fry for lunch today until my co-worker reminded me it was the going away lunch for one of our co-workers…..
As much as I LOVE healthy homemade Chinese food, I also totally dig Mexican Food with salsa bars!
We walked over to Sal’s Mexican Food to celebrate and I totally took advantage of their salsa bar…..I have no shame in my love of salsa! (4 points+ for 12 chips)
I think the reason their salsa bar rocks is you can totally make up a salad with all their fun options.
I ordered 1 chicken taco and 1 chicken tostada….not really sure why I ordered one of each since they are basically the same. One is flat…..
and the other is folded in half
10 points+ for both ~ I skipped the beans and rice because I knew we were hitting up the Sundae Bar at work for dessert.
Every week our Café has a Sundae bar with all the fixin’s…..I made sure I filled the bottom of my cup with fruit (bananas, strawberries & pineapple) before I topped it with a little strawberry & vanilla ice cream with whipped cream.
It was so good I am pretty sure I need to forget it’s every week this summer LOL. (6 points+)
As soon as I walked in the door, The Husband and I headed over to the downtown Farmer’s Market to stock up. This week they had a few BBQ Food Trucks at the market and we decided to Just Go With It nixing our plans to cook.
We decided on the Curbside Eats for some Korean BBQ.
It was totally the pictures and the BBQ smell that sold The Husband.
We shared the Korean Chargrilled Short Ribs with Sticky Rice and Kim Chee. It was pretty delicious. He also got a tri tip sandwich and a hot link from another vendor LOL. (8 points+ for my half)
We also devoured some of the organic strawberries we bought.
I am off to catch up on the magazines that just showed up today!

Danica, i finally, finally, FINALLY got to go to my first Trader Joe’s this week! I printed your list and had the best time. Honestly since joining WW over ten years ago I have been hearing about Trader Joe’s and they finally came to Texas! Thanks for taking the time to make that list!

I have to try the pig on a blanket! Thank you for the recipe and also thank you for the stats. I think the hardest thing with the Body media is reaching the points. 10,000 steps were so easy with the WW pedometer 🙂

Do you have a recipe for the Kung Pao chicken? It looks delicious! Our new favorite around my house is your Firecracker chicken recipe — I’m hard pressed not to make it once a week!

You know I cheated and used the Trader Joe’s Frozen Kung Pao Chicken over brown rice. I do have a recipe for a slow cooker kung pao chicken that I’ve made (thanks for letting me know I need to add it to my recipage!)
