Hi all! Today was such a Monday that I just had to go with it. This morning, I woke up at 5 am to get in my C25K. I ended up spending most of that time adjusting the treadmill belt. I managed a total of 15 minutes jogging before I had to stop. I know they say some workout is better than none, but, I was sad to stop as I was having a good running day.
Breakfast was a quick Healthy Eggroll with some delicious and sweet strawberries (3 sp) – eaten in the car as I was running late for my early morning meeting. I decided to walk to Target today at lunch to get in more steps. I was easily convinced to get a Starbucks too 😀

I served mine over sweet corn making it like a tamale pie…so, so good and 7 Smartpoints for my bowl. Sometimes in my head I think I can get candy for the office and sometimes that works…when it’s candy I do not like.
It didn’t work today lol. I had this X’s 2 (4 sp).I had planned making my Better Than A Big Mac Burgers bun and all for dinner. The Husband opened his big bag on BBQ Lay’s and my resolve for grilled zucchini as my side vanished. So, I went with it because some days you just need to.
To compromise, I swapped my bun for 18 crunchy chips (5 sp).

I would love that recipe as well, along with how you make your burgers. Are they beef, turkey or chicken? I’d also like to know how to make your Healthy Eggroll. It’s pretty obvious that there is a slice of cheese and a fried egg, however what is on the bottom and is there anything between “it” and the cheese? Thank you!

I made my burgers with beef following this recipe http://www.danicasdaily.com/better-than-a-big-mac but you could easily use turkey or chicken too.
For my healthy eggroll, I “fry” my tortilla and egg in non-stick spray sprinkling my egg with salt and pepper. I melt a slice of reduced fat cheddar on my tortilla and finish everything off with a little Sriracha.
