Thanks everyone for your nice comments on my running story.  I LOVED reading about all your personal running experiences ~ totally inspiring :)  Ok, since the weekend is over :(, I have to make my Sunday recap quick so I can get to work *sigh* No more 3-day weekends forever….well, at least not until May.

The Husband requested eggwiches for breakfast since we had to make an early morning trip to Home Depot for his house project.   I whipped up a 5 pt eggwich ~ YUM!  I think I LOVE anything with eggs and bread 😀

The BIG house project we are working on right now is redoing our back yard fence that fell down during the last big storm we had.  The Husband and his friend were pouring all the concrete and putting in the polls yesterday so my job was to make all the food.

You know that is TOTAL justification for a Starbuck’s ~ I had a 3 pt Dirty Latte.

I whipped up some Homemade Healthier Potato Salad for their lunches.  I added a little red bell pepper for crunch and a sprinkle of dill seasoning this time to mix things up.  If you are a potato salad lover you have to give this one a shot ~ you can have an entire CUP for 4 points versus 7 pts for only 1/2 cup of the real deal.

Plus a BIG Batch of Kale Chips ~ The Husband’s friend and I LOVE these, however, he won’t touch them LOL.

I made them GIGANTIC Club Sub’s with AVOCADO.

2 Slices TJ’s FF Multi-Grain Bread

2 Slices Lean Honey Roasted Turkey & Ham

2 Slices Thick Bacon

2 Thick Slices Tomato

1/4 AVOCADO mashed with sea salt & pepper

BEYOND GOOD ~ I think this might be my new FAVORITE combination for 7 points.

This sandwich didn’t need my “chips” stuffed in it ~ I enjoyed them on the side. (0 pts)

With a little little 2 pt scoop of Healthier Potato Salad.

I spent the afternoon doing a little shopping, a little relaxing and a little playing in the kitchen.  I whipped up a batch of 2 pt Parsnip Chips to snack on ~ delicious!  I will post about these later this week too.

Plus a 1 point Low-Fat Sargento Colby Jack Cheese (I get these at Sam’s Club too!).

Dinner was FAST and TASTY.  I took yesterday’s leftover Italian Sausage and Pepper Pasta topped it with some LF Sharp Cheese and baked it in the oven at 425 for 20 minutes.

While the pasta cooked, I pulled out another flavor of the Focaccia Breads I picked up at Sam’s Club ~ Spinach & Cheese.

2 points for 1/2.

Taken from the freezer and baked for 5 minutes at 425.

TASTY!  This flavor reminds me A LOT of the Bolani Breads with the spices.  I LOVE how soft, yet, crispy the bread gets.

Ok ~ confession time ~ I got a little crazy with the candy last night.  This is why I usually RESIST buying any type of holiday candy.  I don’t need to have a Reese’s because it’s shaped like an egg or a Christmas Tree or any of that ~ I mean honestly, you can get Reese’s any time.

Obviously all that self talk didn’t do me any good because I still bought it LOL.  I do think one benefit is that it is only 2 points 4 points and it’s a single serving ~ totally worth it and there are none left in the house because I bought 1 for The Husband and 1 for me.

The Husband also broke out the Jelly Belly’s I bought him (1 bag for $1 at the Jelly Belly Outlet).  I knew I couldn’t resist, so I portioned them out into a little bowl and had a 2 point serving.

Not my proudest moment to share, but, in an effort to be 100% accountable to you all and myself there you have it :)  Good thing for WPA 😀 ~ today’s a new day to eat less LOL!

    I think the candy you had should be part of a proud moment. You portioned out a serving, instead of mindlessly eating. You accounted for it in your points instead of just pretending it didn’t happen. You (most likely) enjoyed it. ALL good things that show you are making healthy and BALANCED eating a lifestyle. I say way to go! 🙂

    I agree with the previous commenter…it could have been way worse! The fact that you portioned out a reasonable serving and enjoyed it mindfully is definitely a victory!!!!! And as always, thanks for your honesty on the blog 🙂

    Wow, no kidding about wanting to know what those catty ladies have to say about each other!!! Hahah The preview about crazy Michelle looked intriguing. It’s kinda sad that the show editing makes people look way more ridiculous than they are (I would NEVER want to be a contestant), and HOW SAD were you when Gia left??? Well…okay, I was super sad. Jake is a douche bag. And then there was the clip of Tenlee saying Jake wasn’t physically attracted to her?? OMGEEE JUST because she’s not a whore??? I was pissed, but let’s see what happens tonight. Hahhah
    OK, enough about the Bachelor. YUM too all your great eats!!! Except the jelly beans because they always get stuck in my teeth!! Argg!!

    Wow, everything looks amazing!!! I need to try that potato salad (love the idea for the red pepper-I usually add that to tuna salad for crunch).

    I bought so much candy this wknd since it was the Valentine’s Day clearance stuff and now feel like I have my own candy store at home. Thankfuly, I have self control when it comes to sweets and it’s the salty stuff I can’t keep at home.

    I cannot wait for Bachelor tonight!! LOL at the comment by Michelle above!

    mmmm, love Reeses!!!!!! I am not sure if you like dark chocolate – I prefer Milk but as you probably know Dark is “healthier” – so, at Trader Joes I get the 73% Dark Chocolate Covered Almonds and put them in the freezer. When I want something sweet I grab 3 (I think a serving is 8/9) but they are just sweet enough to satisfy the craving but not GOOD enough that I want to eat the entire package. Plus, almonds are good for you.

    They are in those square plastic things Trader Joes puts their candy in…they don’t freeze in the freezer they just get really cold…I think they taste better that way.

    This recipe for lower fat potato salad sounds really good, I normally steer away from these creamy based salads too bc of their fat content however sounds like you’ve found a guilt-free way to enjoy! 🙂

    Mmm, that sandwich and foccacia looks fat!

    Don’t worry about a few treats- I had a couple chocolate mini eggs myself today, as long as you eat in moderation, no biggie!

    MMMM that all looks so good! I cannot resist peanut butter eggs and think they are better than cups. I’ve been wanting to put one on a bowl of oatmeal. MMMM!

    Are you sure they are only 2pts? The big ones are 4 I thought. Still worth it. Unless you’re like me and buy a 6 pack LOL

    Love teh egg sandwich. I might need one tomorrow!

    OMG ~ Reese in Oatmeal – I LOVE that idea…..banana, reese, oats….YUM!

    I am such a freakin clown ~ I read the package wrong and entered the wrong NI – you are totally right ~ they are 4 points each (bleh!) I will have to update that. The funny part is I STILL think they are totally worth 4 points. Maybe I need to buy another to put one in oatmeal 🙂
