Another favorite cookie for this week’s Flashback Friday. I will be the first to admit that I’ve never actually had a “real” Moon Pie, but, I sort of wish I had…I LOVE the name and I think it would be fun to say I am going to have Moon Pie or maybe a Moon Pie Cookie.
When I originally developed my Mock Girl Scout Tagalongs, some of my taste testers (super cute kids of course!) said that they would be PERFECT cookies if they included marshmallows too.
It didn’t take me long to realize that crispy+peanut butter+marshmallow+chocolate would be amazing…..the only thing I needed was a name. Enter……
MOCK MOON PIE COOKIES RECIPE
INGREDIENTS
- 25 Reduced Fat Ritz Crackers
- 25 tsps. Honey Roasted Creamy Peanut Butter
- 25 tsps. Marshmallow Crème
- 4 oz Milk or Dark Chocolate (Good Quality ~ any type you would enjoy eating)
INSTRUCTIONS
1. Line 2 cookies sheets with parchment paper. Place 25 crackers on the cookie sheet then top with the 25 teaspoons of peanut butter and marshmallow creme. Refrigerate for 30 minutes to 1 hour.
2. Melt chocolate in a double broiler over medium low heat.. Once melted, turn heat to low to keep chocolate warm.
2. Using two teaspoons, drop one peanut butter marshmallow covered cracker in the chocolate using the spoons to coat it with chocolate. Lift the cracker out of the chocolate shaking off excess chocolate. Place on the parchment paper and repeat with remaining crackers.
3. Refrigerate until cooled and the chocolate is hard, about 20 minutes. Store in the fridge or freezer in an air tight container.
Makes 25 Cookies, 3 SmartPoints or 2 points+ each

STEP-BY-STEP
Here is everything you need to make your “Mock” Moon Pies.
Top each cracker with 1 teaspoon of peanut butter and 1 teaspoon of Marshmallow cream. Refrigerate 30 minutes to 1 hour.

I honestly think these are my absolute FAVORITE Mock Cookie I made for the Bake Sale.

Those do look delish! Based on what my dad has told me, I don’t think moom pies orignally had peanut butter in them, but who cares? PB makes everything better! Oh, and you might get a life, he said he would get an “RC and a moonpie” at the corner store. If you have never hear of RC, it is a brand of cola. I don’t know if they even still make it.

more crackers into cookies! you are an animal. i have never had a real moon pie either! they were on unwrapped on the food network the other night and marshall and i were talking about how we had never had one!!

I LOVE MOON PIES!!!! They still sell them too. Vanilla, Chocolate and Banana, plus “double deckers…lol, they are one of my favorite things…. so so yummy if you every come across one you should use the points and enjoy it! LOL… If you have a cracker barrel restaurant in your town they sell them there….

OMG ~ I used to drink RC Cola as a kid….now I think that makes me sound old LOL. I might just have to venture out to try a REAL DEAL moon pie some day. 🙂

OHHHH, thanks for letting me know that because I think we actually do or used to have a Cracker Barrel. I will definitely have to hunt one down just to try a real deal moon pie…..mentioning Banana sold me!

OMG!!! These look so phenomenal… and I love the step-by-step and visual on the products. Makes it all a no-brainer..
Last year I went to a store that was only Moon Pies and paraphernalia… OH boy… they had a mint moon pie… it was like a girl scout cookie but on crack… or maybe it was “crack” for me… It was probably the most awesome moon pie ever… you MUST check it out… when you have some points to spare… so worth it!

Might need to make these but obviously, easy to only make 4 cause I’d eat the entire 25 (hiding them from my hubby!)
