Hi all! How was your weekend? This weekend was super busy but also very productive. I not only managed to clean out my closet to make room for some new clothes, but, I pulled out my “smaller” sizes bin. I almost just decided to donate them thinking they won’t fit….but they did! I honestly have not wore the pants for at least 6+ years and I don’t care that The Husband teased me about the shirts being from the 90’s. They fit and that is all that matters!
I think it also might just be a lucky weekend as I scored two new cookbooks at the Sacramento antique faire today for $6 each.Post faire, I got both of these at Sam’s Club 30% off. Yes, I’m still on my ground beef addiction so now I’m fulfilling it with a cookbook.
Before heading out of town this morning, I got a tall nonfat cappuccino with caramel on top (2 sp).
Then split a ham, egg & pico de gallo breakfast burrito with The Husband at the faire (4 sp). It doesn’t look pretty but it was pretty tasty.
When we got home, I whipped up a fast caprese salad to share using these Trader Joe’s Fresh Mozzarella sticks. I love that this allows you to make individual caprese salads.
Heirloom cherry tomatoes, cucumber, 2 sticks, basil, a little evoo and balsamic glaze. I had half of this for 3 sp.
I made a quick buffalo chicken sandwich to go with it. (1 slice Nature’s Own Butter Bread topped with 3 slice buffalo chicken, 1 tsp light mayo and mustard) – 2 SmartPoints!
I love that we are finally getting other fruit aside from apples, pears and oranges. I couldn’t wait to bust into this week’s stash with a banana berry bowl for dessert.
We also BBQd dinner tonight making a spin on these Better Than A Big Mac Burgers with asparagus mushroom foil packs.
This was so good I kept asking myself why have I waited so long to make these again . (9 Sp)Since it’s Sunday and I am finding any reason to eat these berries, I whipped up super easy Strawberry Shortcakes that taste just like shortbread cookies. Recipe coming up soon.
6 Smartpoints for everything on my plate.This week is going to be tricky as I have work lunches/meetings all week and 2-3 dinners out. But, I plan on being selective in my food choices and cooking on the days I am home.
